Cheesecake Apple Fluff Salad

Ingredients

16 ounces Cream Cheese — softened*

1 cup granulated sugar

1 teaspoon vanilla extract

16 ounces whipped topping

3-5 apples, diced

1 cup chopped nuts — walnuts or pecans

1-2 cups mini marshmallows

Directions

Place cream cheese in a large bowl. Beat with a hand mixer until smooth, then mix in sugar. Mix or stir in whipped topping until the mixture is smooth and lump-free. Add the apples, nuts, and marshmallows. Stir to coat. Serve immediately, or store in the refrigerator in an airtight container for up to 24 hours. NOTE: Philadelphia Cream Cheese makes a ready to use pre-made refrigerated cheesecake mix; this is a perfect use for that product, and would save you a chunk of time!  You can also add grapes to the salad OR drizzle it with caramel!  If you want to make it festive before serving, make a wreath on top with green M&M’s and embellish it with red ones.

TINCUP American Whiskey

Description

TINCUP is a blend of two great American whiskeys, each aged in #3 charred oak barrels. “High rye” bourbon, distilled and aged in Indiana, is blended with a small amount of Colorado single malt whiskey. These whiskeys are then cut with Rocky Mountain water. TINCUP is named for the Colorado mining pioneers and the tin cups from which they drank their whiskey.

Chicken Pot Pie Soup

Ingredients

2 tablespoons butter

1/4 cup finely chopped onion

1 1/2 cups chicken broth (from 32-oz carton)

1 1/2 cups milk

1 package (1.6 oz) garlic and herb sauce mix  (Knorr Pasta Sauce Mix, Garlic Herb, 1.6 oz?)

1/4 teaspoon pepper

1 cup diced frozen hashbrowns

1 bag (10 oz) frozen mixed vegetables

2 cups chopped deli rotisserie chicken

Directions

In 3-quart saucepan, melt butter over medium-high heat. Add onion; cook 2 to 3 minutes, stirring occasionally, until tender. Stir in chicken broth, milk, sauce mix and pepper with whisk until smooth. Stir in diced potato; heat to boiling. Reduce heat to medium; cook 5 to 7 minutes, stirring occasionally, until potatoes are tender. Stir in frozen vegetables and chicken; cook 10 to 15 minutes, stirring frequently, until thickened and heated through. It’s versatile. Have leftover cooked turkey? You can use that in this soup instead of chicken. No biscuits on hand? Try cutting small 1-inch rounds from Pillsbury refrigerated pie crusts and serving them baked on top of the soup. You can even mix up the veggies in this recipe to match your family’s taste—broccoli, corn, carrots, green beans and onion are all good choices for this hearty soup.  Feeling inspired? Most chicken soups are easily customizable.

Bacon Cheddar Deviled Eggs

Ingredients

12 eggs

1/2 cup mayonnaise

1/2 cup real bacon

2 tablespoons finely shredded Cheddar cheese

1 tablespoon mustard

Dill weed, garlic, salt and pepper to taste

Smoked paprika to garnish

Finely sliced green onion as

Description

Place eggs in a saucepan, and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. To cool more quickly, rinse eggs under cold running water. Peel the hard-cooked eggs, and cut in half lengthwise. Remove yolks to a small bowl. Mash egg yolks with mayonnaise, crumbled bacon, cheese and spices. Stir in mustard. Fill egg white halves with the yolk mixture.  Garnish with thinly sliced green onion, shredded cheddar and bacon bits, sprinkle with smoked paprika (or regular paprika) and refrigerate until serving.

Make Ahead Mashed Potatoes

Ingredients

3 pounds potatoes (about 9 medium), peeled and cubed

6 bacon strips, chopped

8 ounces cream cheese, softened

1/2 cup sour cream

1/2 cup butter, cubed

1/4 cup 2% milk

1-1/2 teaspoons onion powder

1 teaspoon salt

1 teaspoon garlic powder

1/2 teaspoon pepper

1 cup shredded cheddar cheese

3 green onions, chopped

Directions

Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 10-15 minutes or until tender. Meanwhile, in a skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain. Drain potatoes; return to pan. Mash potatoes, gradually adding cream cheese, sour cream and butter. Stir in milk and seasonings. Transfer to a greased 13x9-in. baking dish; sprinkle with cheese, green onions and bacon. Refrigerate, covered, up to 1 day. Preheat oven to 350°. Remove potatoes from refrigerator and let stand while oven heats. Bake, covered, about 30 minutes. Uncover; bake 10 minutes more, or until heated through. NOTE: For slow cooker prep, prepare the night before, spraying your crock with non-stick cooking spray and put in your cooker on low for 4-6 hours, or until hot.
