Quick and Easy Lo Mein
Description
Bill from the ICQ podcast put me on the spot, at Hamvention, when they interviewed us and asked if I had a recipe. After they posted the video to YouTube, I posted the following recipe in the video comments. SO… I decided to share it with our listeners as well! I’m a HUGE fan of Lo Mein. This is a quick and easy recipe, that takes less than 30 minutes from start to finish.
Ingredients (Sauce)
2 tablespoons Dark soy sauce*
1 tablespoon Light soy sauce*
1 teaspoon sesame oil
1 teaspoon sugar
Ingredients (Lo Mein)
4–6 ounces uncooked Lo Mein noodles (or substitute Spaghetti Noodles)
1 tablespoon vegetable or sesame oil (to stir-fry protein)
2 cups bite size pieces of chicken / shrimp / beef / pork / tofu
1 tablespoon sesame oil (to stir-fry vegetables
3 green onions, chopped (separate green parts from white parts – you’ll use both separately)
2–3 cups julienne cut or chopped vegetables like carrots / green, red and/or yellow bell peppers / cabbage / bok choy / mushrooms / broccoli / onion / snap peas / fresh spinach (use whatever you desire!)
1–2 tablespoons Mirin
Directions (Sauce)
Shake all the sauce ingredients together in a jar.
Direcitons (Noodles)
Cook the noodles according to package directions. Drain and set aside.
Directions (Protein)
Heat the first serving of vegetable or sesame oil in a large wok or skillet. Stir fry protein, then remove from heat and set aside.
Directions (Lo Mein)
Heat the 2nd mention of sesame oil in a large wok or skillet. Add the green onions (white parts) and vegetables to the hot pan. Stir fry until fork-tender, about 5 minutes. Add the mirin to loosen the browned bits up off the bottom of the pan. Add protein back into the pan, then add the cooked noodles and about half of the sauce – toss around in the hot pan to combine. Add more sauce if needed (I usually gauge the amount of sauce I want by the color of the noodles – you want a medium brown color, not too light, not too dark). Serve topped with remaining green onions! NOTE: When a recipe calls for mirin, the Japanese sweet rice wine, you need a combination of acidic and sweet flavors. Add a pinch of sugar to 2 tablespoons of white wine, vermouth, or dry sherry to replace the mirin.

My bottle is from Batch No. 5. Bulleit Bourbon Barrel Strength is made from the same high-rye mash bill as the original expression. The barrels selected were combined into a single batch for on bottling Louisville, Kentucky. This version is uncut and unfiltered straight from the barrel. Each batch will vary in ABV, ranging between 118 and 126 proof.

Garlic Soup
Description
One (of many!) of my favorite items on the menu at Zydeco’s 5 in Mooresville, IN… the restaurant owned by our friend and fellow Ham, Carter Hutchinson (K9KJN). I came home from Hamvention sick… so a brief whine at Hutch managed to get me the recipe, and I think it mostly cured (along with antibiotics) what ailed me. Thank you, Hutch!
Ingredients
1 cup of minced garlic (I used jarred, that I buy at Walmart; Hutch suggests fresh)
1/2 teaspoon White Pepper
2 teaspoons Thyme
1 stick butter
1 loaf stale French Bread
48 ounces chicken or vegetable broth/stock (might need more)
Heavy Cream (optional)
Slices of french bread (optional)
Directions
Saute garlic, pepper and thyme in butter until garlic is light brown. Pulverize french bread in a food processor to a very fine crumb, then mix into the garlic mixture. Warm the broth/stock to boiling in the microwave (or on the stove). Once everything is hot, mix everything together and float a slice of french bread on top. NOTE: You may need more broth/stock to make the soup the consistency that you like, I used a typical loaf of French/Italian bread from the Walmart bakery, and ended up having to use about 72 ounces of broth/stock (which made the soup fairly thick, and provided about 8 bowls of soup). I typically warm my stock in a saucepan and add the garlic/bread mixture to it and then serve it immediately; you can NOT simmer this, though, as the bread will sink to the bottom and stick to the bottom of the pan. Dish up the soup, stir in some heavy cream (if desired) and float a small slice of bread (which I usually toast) on the soup. I HAVE sprinkled some shredded Swiss (or mozzarella) cheese on the top, too, with some dried chives. All optional serving ideas.

Ingredients
2 (24 ounce) containers mushrooms, cut in quarters
1 cup water or chicken stock
2/3 cup soy sauce
4 scallions, finely chopped
Juice of 1 lemon or 2 limes
6 tablespoons dark brown sugar
1 teaspoon garlic powder
1 teaspoon ground cumin
1-2 teaspoon red pepper flakes
Directions
Place all ingredients in a large crock pot or slow cooker, and stir. Cover, and cook on high 5-7 hours. Serve with a slotted spoon so that the liquid drains out
