Autumn Kale Salad

Ingredients

Dressing:

• 3 tablespoons apple cider vinegar 
• 1 1/2 tablespoons pure maple syrup
• 2 teaspoons Dijon mustard 
• 6 tablespoons olive oil
• Sea salt and black pepper to taste

Salad:

• 1 medium butternut squash or sweet potato peeled and cut into 1/2” cubes (about 4 cups)
• 6 slices bacon of choice 
• 6 cups kale chopped
• 1 teaspoon olive oil + 1 tablespoon olive oil divided
• Salt & pepper
• 3/4 cup pecans
• 1 teaspoon maple syrup
• 1 large honey crisp apple dried cranberries or cherries
• 1/2 cranberries or cherries
