Amanda Kloots tragically lost her husband, Nick Cordero, during the early months of the pandemic in 2020. In the aftermath, she’s worked incredibly hard to support her young son and share her grieving journey with those who might be going through the same thing. Today, Amanda discusses her memories from the early days of losing Nick, how she received support during that time, how there’s no room for judgment when it comes to grief, and her thoughts on dating after losing a spouse.

Grilled Cheese and Waffle Fries Recipe

1. Take two pieces of bread and slather them in some mayo on the outside and butter on the inside, or however you prefer.
2. Add some american cheese and put your sandwich together.
3. Put a little bit of butter in the pan, heat it up and put your sandwiches in there. 
4. Toast on one side until golden brown then flip ‘em over and toast the other side with the lid on so that the cheese gets nice and melty.
5. For the waffle fries, we had them frozen so preheat your oven and bake to the package instructions.
