Meet our Head Chef Brian Hill…He’s a pretty big deal. He helps take the restaurant recipes and food quality to the next level. Let me tell you why you should know Chef Brian. He has been awarded many titles including a nomination for a James Beard semifinalist seven times and a finalist for “Best Chef northeast” from his restaurant Francine Bistro in Maine. Chef Brian opened the acclaimed “Shepherds Pie” pub and “Seabright Pizza” restaurants. In Los Angeles, he held chef positions at Paley, Barrel and Ashes, Dear John’s.   

Happy Birthday Lucas! Lucas shares his dreams about the way he wants to see a larger collective in the restaurant industry, and how restaurants can come together to create something larger than itself.

It’s been crazy. Things have been quite busy over at Nicolas Eatery, we had one of the best weeks we have had so far. Let’s celebrate these small victories. 

There’s a spark that happens when you try something really great or run into the right person at the right time. That might not have been the time we tried to serve sushi…but hey, I’ll try anything that will lead to success! Lucas and I want to tell you about everything we have tried and how we get back to this original vision.

Today we discuss one of the lows we experience in the restaurant industry and how it affects business. The decisions that have to be made to operate a successful restaurant, and the steps that need to be taken in order to overcome challenges…On a high note, we’re drinking wine today! Tune in.

When you think of Nicolas Eatery you might think of myself or Lucas, who often greets you at the door. It’s important we recognize how crucial to our success are the women in our lives. Fazi is my wife of many many years. She helps make salads, desserts, prep food, design the restaurant, and is the only reason we have such beautiful flower displays. More than that, Fazi helps support the family after hours. Thanks to Fazi and my family, Nicolas Eatery gets to be as beautiful as it is and we can all work together under 1 shared dream.
