  • Cooking Does Not Have to be Stressful with Stephanie Stiavetti
    On this episode of the Plan Simple Meals Podcast, I’m really excited to talk with Stephanie Stiavetti. She’s a trained chef who helps regular people feel fabulous about cooking.
    Steph learned taught herself to cook as a kid, but stopped in her teens and 20s. Some significant health issues led her to learn to cook and feed herself again. She went to cooking school and pastry school and has worked in restaurants. Now her focus is helping other people be amazing home chefs.
    Steph has some amazing cheat sheets that help you in the kitchen. Things like basics about oils and sauces . . . basics that help you make it easily—and amazing.

    How to find the right knives (and cut safely)

    Doable Changes from this episode:
    GET ONE TOOL YOU LOVE. The right tools make cooking easier and more enjoyable. Get a knife that feels right in your hand or the slow cooker you’ve been thinking about or a hand blender … and then use it for one week to see how it feels and how it changes your food experience. 
    ADD A LITTLE SALT. A little salt goes a long way. As Steph says, it can be the difference between hating the salad dressing you make or loving it. She recommends ½ tsp of salt for 2 cups of dressing. I add a pinch to my morning smoothie. Try adding a little salt to something you normally don’t salt and see what changes.
    MAKE COMPOUND BUTTER. Sometimes what gets in our way of eating real food is feeling like it lacks flavor, especially if you are used to more processed food. Steph talks about making compound butter as a super basic sauce. Use her ratio, 1/4 pound of butter plus three tablespoons of fresh herbs plus one teaspoon of spices, to make a compound butter to flavor your food. (She has a cheat sheet for this to give you more ideas about what to use). 
     
    REALLY getting healthy as a family can be a big lifestyle change. But no matter how insurmountable it may feel, focusing on one doable change at a time can help you take small steps toward your big goal.
    A healthy lifestyle is really made of lots of little things that when repeated regularly and added together over time make a huge impact on your life.

    Thanksgiving is fast approaching here in the US (which means we are in the full swing of the holiday season.
    You have your plans. You know who is making what.
    But maybe it doesn’t look quite like a Martha Stewart magazine.
    Maybe it looks great but you feel stressed out, anyway.
    PlanSimple Holidays will help you makeover your holiday season, but today I want to focus on mini changes that can help make an already planned holiday (like the one 2.5 days from now) feel happier and healthier.
    You already know you are going to your aunt’s house with all your extended family and their kids. You know that you all raise kids a bit differently.
    Or maybe you are spending the holiday more alone because your family is not near by, and though it seems like it would be fun to get together with friends, that is not what’s up.
    And of course there are thousands of scenarios between that have little things “wrong” with them.
    So what are some things you can do to make the day happy and healthy?
    Know why the day is important to you. Not the textbook version, your heart version. And communicate that to your spouse and kids. Make sure you include one thing in the day that that maps back to that — a family walk, a gratitude ritual, an hour alone (those could be mine!).
    Understand what could go wrong. Is it that you have a child who is allergic to dairy and you’re not sure if aunt Suzy really heard you? Or maybe you have a really picky eater and you fear a full on tantrum? Or maybe you don’t approve all the parenting styles parents, but you end up saying “yes” to an inappropriate movie out of guilt for being “that mom.” Maybe it is you. Maybe you always over eat on the holidays. Write it out. Get it all out of your head and onto paper.
    Make a plan for each thing that you are worried about. Bring food for the allergic child. Pre-frame the food with the picky child. Decide with your spouse what will go down when the movie comes out. Figure out what food will leave you feeling good and have a strategy for knowing when you are full. Can you pause and check in? What does that look like in a party situation?
    Chose in advance and write it down.
    I did not make up this process.
    Corporations have been using it for years for customer service.
    Have you ever noticed when a barista makes something wrong at Starbucks? The barista (mostly) keeps smiling, and gives the drink to a customer who wants it, and then happily makes you a new one. The customer can get angry and downright mean, but the outcome is always the similar. This is because Starbucks has a process for this, and employees map out what to do with an angry customer before one even shows up.
    This can work for our holidays too!

    On this episode of the Plan Simple Meals Podcast, I’m really excited to talk with Anne Sarkisian, a author, an artist, mom and grandmother. We met at a gluten-free expo and she has so much to share about gluten and dairy intolerance—and if you think this doesn’t affect you, listen in, because she talks about how she realized how much these things were affecting her family.


    Anne’s grandson was pale and thin. He lacked energy and was irritable. He got tested and they changed his diet, and everything changed. Anne and her family made major changes too, and Anne talks about how cutting out gluten, and then dairy, has improved her own health.


    Anne encourages people to get tested, because you can be affected for 10 years before you develop an obvious problem. And if you have a child who is hungry all the time or really irritable, you may want to get them tested.

    • Surprising symptoms that you may have a gluten intolerance



    • Why you need to advocate for yourself as many doctors don’t know enough about gluten intolerance



    • Why dairy issues are related to gluten-intolerance

    • GET TESTED. The idea of changing your lifestyle might feel daunting, but as Anne and I discussed, it’s not that hard to eat gluten-free, especially these days. The first step, before you start playing with your diet is to get tested. Anne recommends particularly the stool test. You may need to push for testing, but it’s worth knowing.



    • PAY ATTENTION TO YOUR KIDS. Anne knew something was off with her grandson even before they got tested. Things to watch out for: complaining of hunger frequently (even after eating), not wanting to eat, irritability, inability to focus, skin issues, frequent illnesses . . . the list goes on. Keep track of what’s happening and ask about gluten testing.



    • SLOW DOWN. Anne talks about getting caught up in the holiday rush and not taking care of herself. You need to slow down.
