    Usually when I travel for a Potstilled Radio interview, I average about 70km a trip to meet the interviewee. I the case of this episode I threw the average out the window and instead travelled over 7,000km from Dublin to Denver, Colorado to interview Talnua Distillery (Irish: New World) co-founder and head distiller Patrick Miller.

    Talnua’s inaugural Single Pot Still release. 

    Join me as I sit down with Patrick Miller, the Co-Founder and Head Distiller of the United State’s first Single Pot Still distillery. Listen in as Patrick describes how he and his team have taken an Irish style of whiskey making and crafted his own Colorado grown and distilled tribute to this style.

    To be clear, Patrick and his team at Talnua are not making “Irish style” whiskey, he is very clear that he is making American Single Pot Still Whiskey, he is paying homage to the Irish style but with a very intentional Colorado terroir.

    Listen in to how Talnua went from a honeymoon to Ireland to a fully fledged craft distillery. Patrick takes us through not only his production methods but also his full range of whiskeys currently available from the distillery and his plans for the years ahead.

  • Episode 2.7 – Irish Whiskey Auctions Co-Founder – Anthony Sheehy

    Join us for another episode of Potstilled Radio, the only podcast dedicated solely to the exciting world of Irish whiskey. In this episode we travel to Dundalk, Co. Louth, to the Irish Whiskey Auctions, Ireland’s first whiskey auction website. It is here that we sat down with co-founder, Anthony Sheehy, who told about the success, trials and tribulations that he, and his wife Katie, have experienced in trying to set up a online whiskey auction site in Ireland.

    Anthony tells us about how the site went from a brain wave that he had on the 21st of January 2018 to the first online whiskey auction in the country in under ten months. He explains the issues he had convincing the relevant departments of the Irish government to allow him to conduct this business in Ireland and he even gives us insight into the bizarre requests of the declaration of planning premission that he was informed that he would need for his website…. however that was supposed to work?

  • Episode 2.6 – Tullamore D.E.W. US National Ambassador – Tim Herlihy

    Join us for another episode of Potstilled Radio, the only podcast dedicate to the exciting world of Irish whiskey. In this episode we sit down with Tullamore D.E.W.’s US national Ambassador, Tim Herlihy, as he talks us through some of his career highs, like creating the world’s largest Irish Coffee, as well as outlining the key differences between the US and Irish based Irish whiskey markets.

    Tim has been the US National Ambassador for Tullamore D.E.W. for almost 8 years and while he calls New York home for the moment, the skies over the US are his true home, as he travels more weeks in the month than he is on terra firma. As such, Tim talks us through what it is like being the National Ambassador for such an iconic Irish whiskey brand and he even lets us in on some of the hijinks that he gets up to along the way!

  • Episode 2.5 – The Shed Distillery Inaugural Pot Still Release – Founder PJ Rigney

    Sit down with us in this episode as we chat to PJ RIgney, the founder of The Shed Distillery, which was the first distillery in Connaught in over 101 years. In this episode we discuss The Shed’s Inaugural Drumshanbo Single Pot Still release, the first whiskey distilled and released from the distillery in county Leitrim.

    While the exact percentages of the grain in the mashbill are a tightly held company secret, PJ was able to disclose that this Single Pot Still Whiskey has a mashbill containing malted barley, unmalted barley, as well as 5% oats, which keeps it in line with the current Irish Whiskey Technical file.

    This spirit was matured simultaneously for between 3 and 5 years in ex-bourbon barrels and oloroso sherry hogsheads. The final product contains no caramel colouring and it was not chill filtered, which gives you the opportunity to experience this inaugural release without adulteration.

    The initial release will see 12,000 bottles released solely for the Irish market with 5,000 of these bottles going on sale before Christmas 2019.

    Sit down with us this week as we chat to the founder of one of the smallest distilleries on the island of Ireland, Brendan Carty.

    Find out how this young man from the Mourne Mountains went from Architect Down Under to building his own distillery in Ireland.

    Furthermore, Brendan tells us about the trails and tribulations about being Ireland’s only direct fired distillery and what breaks he was able to take advantage of being across the border in the North and under the UK system rather than the Republic’s system.

  • Episode 2.3 – Glendalough Pot Still – Co-Founder Kevin Keenan

    Join us in this episode as we sit down with Kevin Keenan, Co-Founder of Glendalough Distillery, as he brings us through some of the history of the company, their new release Pot Still Finished in Irish Oak and listen how he describes their two up coming releases a 17 year old in Mizunara and a 25 year old also in Irish Oak.

    Listen and learn about how the distillery began this Pot Still journey by contract distilling their own pot still liquid, and worked with forestry conservationists to not only source their own Wicklow grown oak trees but also, felled them in sustainable ways to protect and help grow the Irish Oak populations in Irish forests.

  • Episode 2.2 – Dissecting the Irish Whiskey Technical File – Brian Greene & Fionnán O’Connor

    Join us this in this episode as Brian Greene and author Fionnán O’Connor deep dive into the documents that govern the regulations around Irish Whiskey, most notably, the Irish Whiskey Technical File.

    In this episode Fionnán O’Connor tackles the current regulations surrounding Single Pot Still Irish Whiskey from a historical viewpoint, drawing from his PhD reserach into the historic mashbills of Irish Distilleries as well as citing internal documents (published 1953) and definitions from the original ‘Pot Still Distillers Association’ which was founded in 1916, as precedent.

    Brian, on the other hand, leaves the opinions and question of historical accuracy to Fionnán and instead he deep dives into the legal documentation of the Irish Whiskey Technical file and the EU legal documents that support the technical file, which give it its legal precedent.

    In particular he examines what is actually protected and forbidden by the Irish & EU regulations as they stand. Finally, he examines whether or not the definitions in our technical files are written in stone or if they could be amended and if so, how this process would take place.

    In this episode Brian references a number of EU documents and I have assured all interested that I would cite the links to these documents below for cross referencing.

    The Irish Whiskey Technical File 2014 

    The Irish Whiskey Technical File 2014 submitted to the EU was replaced on the 17th of May 2019 by a newly revised and re-written technical file, as noted by the title “As registered by the EU Commission Services on 27th of March 2019” (the title page of which can be seen above). This file was subsequently removed and later replaced with the 2014 Technical File version FD/36/073 re-uploaded in its stead.

  • Episode 2.1 – Malt Vs Mashbill – Fionnán O’Connor on Single Pot Still Whiskey

    Welcome to series two of Potstilled Radio!

    Welcome back to our audio investigation into what makes the world of Irish whiskey tick.

    In this episode, I sit down with the author of the #1 resource on single pot still whiskey history in Ireland, Fionnán O’Connor.

    Fionnán takes us through the journey that led to him authoring his book, “A Glass Apart”, as well as how he was accepted to undertake a PhD, which investigates the historic mashbills of Ireland, to better understand the economic, historic and socio-economic factors that drove these mashbills.

    Ultimately, Fionnán is sternly opposed to the current legal definition pertaining to what can and cannot be called “single pot still Irish whiskey”, and the research uncovered in this PhD will become freely available to any distillery in Ireland, as Fionnán describes it as their “culinary birthright”.

    Listen is as Fionnán lays down his case why he believes that we should pay homage to the past and why it is important not to ignore historical precedent in favour of keeping a simple product on a shelf. Fionnán supports his arguements fantastically, while citing from primary documentation, such as the first ever attempt at an Single Pot Still Irish Whiskey definition, which was put forward by the Pot Still Distillers Association – which as Fionnán explains, were the first producer lead lobbying group that, laid down the first written standard of what pot still Irish whiskey should be.

    Join us as we sit down with Noel Sweeney, the Master Distiller of Powerscourt Distillery, which is nestled in the grounds of the 3rd Best Private Garden in the world, Powerscourt Estate, in Co. Wicklow, Ireland. Noel takes us on a journey through the distillery’s founding, how the project came to be, while also describing the visitors experience when they arrive in the new Wicklow based distillery.

    Moving away from the hospitality side, Noel gets into his forte as he discussing the current and future production plans for the Powerscourt Distillery liquids, while also giving us a sneak peak into the current Fercullen range.

    In this episode, International Sales director for the Hinch Distillery, Michael Morris, at Japan’s world renowned, food and drink’s exhibition, Foodex.

    In Japan, Michael took the time to sit down with us and talk us through their new brand that is launching globally with five new whiskeys, that cross the malt, blends and single pot still categories. This is an exciting new entrant for the Irish market as this marks the first sourced single pot still whiskey to enter the Irish market. We discuss all of these new whiskeys, the company’s new distillery that is currently under construction as well as their thoughts on the looming elephant in the room, Brexit. As a distillery, situated in Northern Ireland, they will remain politically in the United Kingdom, yet will always be representing the cross boarder category that is, Irish whiskey.
