    In this episode, Chapelgate Irish whiskey company founder, Louise Mc Guane, sits down with us and talks us through the foundation of JJ Corry Irish whiskey and the trials and tribulations that she faced while reviving Ireland’s lost history of whiskey bonding. As a little bonus, Louise announced for the first time, globally, her plans to honor the Saint Patrick’s Battalion, with a brand new JJ Corry expression.

    I am delighted to say that Louise was good enough to take time out of her recent market activation visit to East Asia to sit down and record this interview. This also marks the first episode of Potstilled Radio that is recorded outside of the Emerald Isle.

  • Episode 11 – An Advanced Look at the Dublin Liberties Distillery

    Join us for episode 11 of Potstilled Radio where we get a behind the scenes look at the new Dublin Liberties Distillery, which has just opened in the heart of the Dublin Liberties.

    Master Distiller, Daryl McNally and Global Whiskeys Ambassador, Geoff Speiran, walk us through all of the amazing features of this new distillery in Dublin 8. They talk us through the fun aspects of launching a new distillery project as well as some of the trails and tribulations.

    A moment in time – The three copper pot stills in the Dublin Liberties Distillery. Taken the day of recording, the wash pot (left) was fired up and had changed colour. The other two pots were not fired yet.

    Finally, listen in as the guys discuss their newest range of aged single malt whiskeys to hit the market.

    In Potstilled Radio, episode 10, we sit down with Irish Distillers’ Prestige Ambassador, Michael Cowman. Having started his professional career in the Irish Navy, he takes us through his international career progression from sailor to brand ambassador.

    Michael took us through the events of 2018, that made the year one of the most exciting for the Irish Distillers portfolio. Single Pot Still is growing as a category worldwide and IDL boosted this with some fantastic releases, such as Redspot and a number of Single Redbreast Sherry Cask offerings.

  • Episode 9 – Roe & Co. European Ambassador – Alan Mulvihill

    Potstilled Radio is back for 2019 and we are kicking off the year with an interview with Diageo’s European Ambassador for their first ever start up distillery, Roe & Co.


    Alan Mulvihill walks us through what it is like to work on Diageo’s first ever start up team. Listen in to this very candid interview where he talks us through the new distillery, future liquid releases as well as some of the community backlash that his team have received for being a part of industry giants, Diageo.

    The outlook is bright for Irish whiskey with giants like Diageo coming back to the market to invest in jobs and its liquid future. Alan describes how the new distillery is expected to open midway through 2019, which will coincide with the next installment of the Roe & Co. liquid releases.

  • Episode 8 – Dublin Liberties Distillery – Darryl McNally & Geoff Speiran

    Sit back, relax and join us as we sit down with two of the Dublin Liberties Distillery team, in our first ever double guest episode. In this episode we sit down with Darryl McNally the Director of Irish Whiskey and Geoff Speiran Global Whiskey Ambassador to talk all things about their company’s new distillery venture in the heart of the Liberties as well as the exciting year that they’ve had launching the Dead Rabbit Irish Whiskey. 

    Listen in as Darryl tells us all about the future plans for the existing brands within their Distillery’s portfolio, how he is going to once again make ‘traditional’ blended whiskey in Dublin’s Liberties as well as the interesting innovative projects that he is possibly planning with crystal malt.

    The Distillery should be open to the public by December 21st 2018, with a fully functioning cocktail bar that can be accessed by anybody, regardless of tour participation.

    This seems like an incredibly cool project to be launching in the heart of Dublin City. I for one, am very excited to see this project once it is completed.

  • Episode 7 – Dick Mack’s Dingle – Finn Mac Donnell

    Dick Mack’s Pub in Dingle, County Kerry, is a traditional pub in, what is, the most Westerly town in Europe. While this seems like an unlikely location for a whiskey pilgrimage site, Dick Mack’s, under the guidance of Finn Mac Donnell (and a helping hand from Peter White), has become one of Ireland’s leading whiskey watering holes.

    With an eye watering display of whiskey from all over Ireland and Scotland, imbibers are treated to a decadent selection at decent prices, with knowledgeable staff and, honestly, what might make it one of the most unique whiskey bars in Ireland, is that you can have a number of leather items fashioned in-front of you by their in-house leather worker.

    Nestled in the heart of the town of Dingle, Dick Mack’s makes a great beginning or end to a hop around the Ring of Kerry or ideally you can take a short walk to the edge of the town to the Dingle Distillery, where some of the most sought after whiskeys in Ireland are produced.

    Should that not be enough for you, this forth generation bar also has its own brewery attached, who provide tasty beers or in-depth tours for those inclined!

  • Episode 6: Micil Distillery Founder – Pádraic Ó’Graillais

    For this episode we have taken a step back in time to examine the roots of Irish whiskey, Poitín.

    Poitín /potcheen/, which literally means ‘little pot’, is the term to describe unaged whiskey spirit, which would have been the back bone of many rural communities in Ireland throughout the generations. 


    Join me as I sit down with Micil Distillery‘s founder, Pádraic Ó’Graillais, to discuss how this, once illicit industry, has become a licit enterprise. Pádraic takes us through what it was like setting up the first distillery in Galway in the last hundred years, as well as trying to stay true to his grandfather’s recipe, in a much more legitimate enterprise than a still in the hills.


    A fantastic journey of discovery through some of the history, the social history and the ingredients of Micil Poitín in Connemara.

  • Episode 5: Tullamore D.E.W. Distillery Ambassador – Kevin Pigott

    Take a journey with us as we travel to the centre of Ireland to sit down with Tullamore D.E.W.’s Ireland and Distillery Ambassador, Kevin Pigott. Sit and sip while we discover all about what makes Tullamore D.E.W. the second most popular Irish whiskey in the world.

    As always, Kevin gives us an amazing insight into the brand and what it is like to work at the Tullamore Distillery. He also gives us a peak behind the scenes to learn why the peat from the site of the distillery will never be used in peated whiskey, and what other towns almost became the future home of this beautiful new distillery. 

    Kevin has had a fantastic career with Tullamore D.E.W., intially opening the Pennsylvania market for their Ambassador Program. Coincidentally, he was not alone in this exploit. Former Tullamore D.E.W. Brand Ambassador for Pennsylvania, is a title that also resides on Matt’s CV. Listen in as the pair sit in the surrounds of centuries of Tullamore history, whilst they discuss the brand that has been a substantial part of both of their whiskey careers.

    Welcome back WhiskeyPhiles to another Episode of Potstilled Radio.

    This week we take a trip to the most westerly town in Ireland, Dingle, Co. Kerry. It was here that we sat down over a taoscán with the youngest Head Distiller in Ireland, Michael Walsh. It was here in Dingle Distillery that we had a conversation over a whiskey (and a microphone) where we discussed all things about the whiskeys future, how Michael rose to the position that he was in today and the insane prices that Dingle whiskeys are achieving at auction today.

    In Episode three I sit down with Michael Scully, the Founder of Clonakilty Distillery, in the active work-site of his future distillery. This week we diverged from the whiskey to have a chat over a glass of Minke gin. Whilst nosing the Rock Samphire, in the gin, we had an in-depth discussion about the future of the distillery, the revival of almost extinct malting barley varieties and the process of ‘slow cutting’ whiskey.
