Herbs are potent, rich and powerful because they seek deep in the earth for nourishment, they are intelligent because they find ways to nourish themselves, cooperating with other living species to enhance life for all involved.

Elderflower recipe:

20-50 Elderflowerheads

1 kg organic natrual sugar

1.5 L water

4-5 lemon juice and zest

25mg citric acid

Gently shake and wash flower heads removing any bugs.

Boil water. In a big pot add sugar and water and stir till all is melted without it coming to a boil. Add zest, flowers, lemon juice and citric acid. Let it cool then place in fridge for 2-4 days.

Strain filtering the flowers with sieve and after with muslin cloth
