No one loves dairy quite like India. The world’s most populous country consumes more dairy than any other country in the world, but it also produces the most milk. How then can the United States gain significant market access? In the latest episode of The Dairy Download, we speak with two experts about the policy and business opportunities ahead for dairy trade between the U.S. and India.
First up is Sharon Bomer Lauritsen, former assistant U.S. Trade Representative for agricultural affairs and commodity policy. As a former negotiator, Bomer has sat across the table from India’s top trade officials. How can U.S. policymakers make inroads in both the short and long run? Bomer shares her experience and insights.
Next up is Earl Rattray, chair of the India New Zealand Business Council and a founding director of Fonterra. Rattray has been producing dairy in India for more than a decade. While he says no country has preferential access to the Indian market, he does think high-value dairy products and ingredients from well developed markets will be in demand as the country grows and commercializes.

Whether it’s a slice of pizza or a prime-cut steak, whether it’s served on a white tablecloth or in a cardboard box, restaurant food has become a staple of American diets. But even with pandemic shutdowns and restrictions primarily in the rearview, food service still faces obstacles to attracting diners. In the latest episode of The Dairy Download, we speak with two experts about the current state of the restaurant business.
First up is Jonathan Maze, Editor-in-Chief of Restaurant Business. While inflation is a hot topic, data suggests it may be taking a relatively moderate bite out of consumers’ food service budgets. So, where are consumers spending their restaurant dollars? And what’s the next big thing coming to the industry? Maze weighs in.
Next, we speak with Tim Powell, Managing Principal with FoodService IP. Looking beyond traditional restaurants, food service remains hot in establishments like colleges, hospitals and senior living. What does consumption look like in those facilities? And where else are diners going to pick up a bite to eat? Powell discusses those topics and more.

Consumers may not be trapped at home exploring old recipe books and comfort foods, but they are still shopping at retail more frequently than they were prior to the pandemic. At the same time, inflation has consumers tightening their pocketbooks and looking for more affordable options when they go shopping. The latest episode of The Dairy Download features conversations with two guests who can speak to the trends driving demand of dairy and other categories at grocery stores.
First, Darren Seifer, executive director and industry analyst at NPD Group, explains how consumers are “boomeranging” back to pre-2020 trends, but not entirely—see butter, milk, and ice cream. Darren shares his thoughts on how everything from inflation to TikTok to e-commerce impacts how and where consumers spend their hard earned money.
Next we hear from Mark Baum, chief collaboration officer and senior vice president of industry relations at FMI – the Food Industry Association. Mark talks about FMI’s latest “U.S. Grocery Shopper Trends” report, the evolution of dairy product placement in brick-and-mortar stores, and the potential for e-commerce growth in 2023 and beyond.
