This Week’s Happy Hour Special:
Spicy Margarita:
2 ounces of blanco tequila
1/2 ounce triple sec
1 1/2 ounces fresh lime juice (2 limes)
1/2 ounce jalapeno simple syrup
Lime wedges and sliced jalapenos (for garnish)
Optional: Tajin or salt for rim
Jalapeno Simple Syrup:
1 cup water
1 1/2 cups brown sugar
1/2 cup granulated sugar
2 jalapeno peppers, rinsed and sliced
Steps for Margarita:
1. Add tequila, triple sec, lime juice and simple syrup into a cocktail shaker with ice. Cover and shake vigorously until the outside of the shaker is very cold (about 30–40 seconds).
2. Place salt or Tajin on a small plate, rub the rim of a glass with a lime wedge, then dip the glass rim into the salt to coat.
3. Fill the glass with ice, pour in margarita, garnish with lime wedge and jalapeno slice, and enjoy!
Steps for Simple Syrup:
1. In a saucepan over medium-high heat, bring the water to a boil and add the sugars. Stir constantly until the sugar is dissolved.
2. Add jalapeno slices to the pan. Reduce heat and simmer three minutes, stirring frequently.
3. Remove from heat and let the syrup steep for 20 minutes.
4. Strain through a fine mesh strainer to remove the pepper slices and seeds.
5. Mix into drinks!
*Store extra syrup in a sealed container and refrigerate. This should last in your fridge for a month, or you can store it in a freezer bag or ice cube tray and freeze it for a year.
