I began thinking about writhing Macedonia: The Cookbook a long time ago. It took my husband and I about 6 years to complete and my drive to create a cookbook to showcase the vibrant and colorful foods of Macedonia never faltered. As a Macedonian woman, I wanted to teach and share with others the beautiful food from this glorious part of the world. I have always believed, as most chefs do, that the best way to learn about any country or culture is through its food and its kitchens.
Through my research for this book, I realized that there was a broader abundance in the Macedonian cuisine, much more than the few dozen recipes that were the staples in my home. While writing this book, there were many times in my own kitchen that I felt deeply connected to my family and my ancestry simply because I was preparing food that they had been making for centuries. This book is not just a celebration of my ancestry, it is a journey into the culinary world that is modest, simple and honest.
I am a classically trained chef originally from Toronto and now residing in Melbourne, Australia. We lived in Los Angeles for 15 years and I have experience in writing, testing and photographing recipes from my time working in the Los Angeles Times test kitchen, and food styling for multiple brands. While in LA, I owned my own private chef and catering company for 5 years and had the privilege of cooking for many Los Angeles elites and celebrities. I have also had a series of recipes published in the Los Angeles Times.

Bio Ken Albala is Professor of History at the University of the Pacific. He has authored or edited 25 books on food and co-authored "The Lost Art of Real Cooking" and "The Lost Arts of Hearth and Home." Albala co-edited the journal "Food, Culture and Society" and has made numerous appearances in media and at conferences discussing food issuesHe is featured on the DVD: "Food: A Cultural Culinary History." and "Cooking Across the Ages." Albala is also known for his "Food Cultures Around the World" series for Greenwood Press and Rowman and Littlefield Studies in Food and Gastronomy

I call myself a “Storyteller Cook”, because everything I do is to do with cooking and telling stories through the medium of food. I want to inspire the world to cook and eat more Polish food.
I have written a cookbook “Polska” – a love letter to the country where I was born – that has been published in the UK, America, Australia, the Netherlands, Germany and Poland. Since writing this book I have had many opportunities to talk and teach people about Polish food. Now, I have started a supper club – A Slavic Tale – in my local community of Hither Green, south-east London. I want to challenge perspectives about what East European food is, in a fun and and tasty way.

Adrian received an A.B in International Relations from Stanford University in 1991, and a J.D. from the Georgetown University Law Center in 1995. From 1999 to 2001, Miller served as a special assistant to President Bill Clinton with his Initiative for One America – the first free-standing office in the White House to address issues of racial, religious and ethnic reconciliation. Miller went on to serve as a senior policy analyst for Colorado Governor Bill Ritter Jr. From 2004 to 2010, he served on the board for the Southern Foodways Alliance. In June 2019, Adrian lectured in the Masters of Gastronomy program at the Università di Scienze Gastronomiche (nicknamed the “Slow Food University”) in Pollenzo, Italy. He is currently the executive director of the Colorado Council of Churches and, as such, is the first African American, and the first layperson, to hold that position.

I’ve always loved the sights and smells of the kitchen. My mother was (and is) an excellent cook, and as a kid, I was her little shadow as she prepared supper each night. From her, I gained a deep, abiding love for magically transforming pantry items into mouth-watering family meals.
I wanted to be a flavor scientist, But I also had a long and torrid affair with chemically-enhanced, laboratory-concocted “foods” that continued into my college years. At Berkeley, I majored in Nutrition & Food Science because I wanted to become a flavor scientist and create lab-concocted “Frankenfoods” for a living. (Not kidding.) At the time, the faculty was packed with world-class biochemists and food researchers — all of whom were strong advocates of the low-fat dogma. Like a sponge, I soaked it all in, and modified my diet accordingly. Steak and eggs were out; bagels and crackers were in.
In the summer of 2010, I made the decision to go Paleo—and when I decide to do something, I commit all the way. I immediately cut out all grains, legumes, sugar, and processed food from my diet, and read everything I could about the science behind the Paleo diet. I quit doing all the crazy cardio and starting doing CrossFit. I was all-in.
And you know what? I feel great! After working graveyard shifts for more than a decade, I’d been mentally and physically lagging—but once I changed my diet, I found that my energy levels improved significantly, and my moods were sunnier, too. I was a nicer mommy.
Paleo’s the only approach that’s managed to improve my body composition and fuel me with enough energy to wrangle two small boys, hold down a full-time night shift job(I recently quit after 12 years of working graveyard shifts at the hospital!), cook for a houseful of hungry cavepeople, lift heavy(ish) stuff in the gym, and maintain a food blog.
A half-year after switching to a Paleo approach to nutrition, I started Nom Nom Paleo to chronicle my culinary adventures. Since the fall of 2010, I’ve been regularly posting recipes and writing about how to stay Paleo when eating out. I offer kitchen tips and review my favorite cooking gadgets. I’m all about the lazy, so I’m always looking for shortcuts to deliciousness.
