Many of us are feeling overwhelmed by the state of the world. We might be up at night worrying about climate change or presidential elections and everything in between. Our concerns are certainly warranted, but is it possible that this could also be a time of opportunity? Is this the moment in our history where we start to heal what’s been broken? We are entering a time of intense change, Pluto in Aquarius means transformation for all. The question is, what will we be transforming into? Now is the time to craft the world we want to live in, a world that will allow future generations to thrive. As we wander through the woods on this hot, sweaty day, reflect on how you are being called to action. How will you show up in this moment?

What’s for dinner? 

Falafel Sandwich 

Homemade or ready-made falafel

Salad 

• 2 Tomatoes diced
• 1 Persian Cucumber diced
• 1/2 cup Parsley chopped
• 1 Red onion small onion, diced
• 1/3 cup Pickled turnips diced
• 1/2 Lemon's juice large lemon
• 2 tbsp Tahini Paste
• Salt to taste
• Pita Bread
• Hummus

Lemon Tahini Sauce

½ cup tahini
½ cup lemon juice
¼ cup water
teaspoon salt
1 clove garlic minced

Baked Peaches & Cream

Ingredients:

8 teaspoons brown sugar
2 tablespoons butter, cut into 8 pieces
1 pinch ground cinnamon, or more to taste
4 ripe peaches, halved and pitted 
4 scoops vanilla ice cream

Directions:

Preheat the oven to 400 degrees F (200 degrees C).

Arrange brown sugar, 1 teaspoon per peach, in a 9x13-inch baking dish. Top each brown sugar mound with a piece of butter and a sprinkle of cinnamon. Place a peach half, cut-side down, on top of brown sugar-butter. Bake until soft. Top with ice cream or whipped cream. Yum!
