The experimental archaeologist Dr. Patrick McGovern, known casually as the “Indiana Jones of Ancient Ales, Wines, and Extreme Beverages,” and Sam Calagione, master brewer and founder of Dogfish Head Brewery, have spent years resurrecting the beverages of the past.
