It's been a challenging, often heartbreaking year. And just like a hard rain can first make you try to run then slow down and plod through when you're soaked, that's life too, so sometimes it can be hard to look for promise, see light, hear encouragement. And then someone tells me about a chicken sandwich I have to try from a food truck based in Abingdon, VA called The Pakalachian, and the sun breaks through the clouds, not only because of the delicious blend of spices, but because of the buoyant enthusiasm of two young cooks following their hearts and celebrating a combined cultural household through food. Mohsin and Katlin Kazmi blend the culinary elements of both Southwest Virginia and South Asia to produce unique, vibrant dishes that combine the comforting elements of the foods they grew up with, and the results are every bite delicious.
