  • BBQ 042: Tejas Craftory's rustic chocolate and urban BBQ is a match made in heaven
Chocolate and barbecue are a match made in heaven. That's what The Meat Men learned after visiting Tejas Chocolate + Barbecue in Tomball, Texas.
During their Houston roadtrip, Yoni and Stover spent one morning munching on sweets and meats with Tejas Craftory mastermind Scott Moore, who shared the story behind his top-ranked BBQ, bean-to-bar chocolate and his well-regarded restaurant just out of Houston.
It took a lot of willpower not to reach into the Tejas chocolate vats as they were spinning around making chocolate during our tour. Their chocolate is out-of-this-world, but so is their BBQ, which is getting just as much acclaim as their desserts. Make sure to try their pastrami on Thursdays. We got ours in a reuben sandwich and it was legendary. And their coffee chocolate truffles will get you humming as we learned quickly after chowing down on them. You can hear Stover and Yoni get hyper from munching on chocolate throughout this episode. As you can imagine, it gets kinda weird.
Here's a bit on Tejas' story from their website www.tejaschocolate.com:
How did you come up with chocolate & barbecue together at the same place is a question we get often. Friends, we just followed the path. We started a hobby at home making bean to bar chocolate. Sales went alright at the farmer’s market and with some retailers. So much so that we decided to open our own store. Chocolate sales alone were not going to be enough to make it our livelihood, so we decided to add a cafe to the business plan. When we found the old house on North Elm Street in Tomball and looked at the market, we decided Old Town Tomball could use a good barbecue joint. That is exactly how we got here. We make chocolate and truffles from raw cocoa beans, and slow smoke USDA certified 100% all natural Prime Grade briskets at the oldest building in Tomball. We call it The Craftory. Pretty sweet and smokey is what we were thinking. We’d enjoy having you stop by and pay us a visit.
    Come early, eat well.

  • BBQ 041: Creole flair meets Texas BBQ tradition at Victorian's Barbecue
The Meat Men descended on Houston with a singular goal: eat as much world-class BBQ as possible. So when we made our first stop at Victorian's Barbecue we knew we'd succeed in our mission.
Joey Victorian opened up his food cart on his day off specifically for the Best BBQ Show. Listen as we discuss his amazing menu, where he follows BBQ tradition (and where he deviates), Yoni's mustache, cooking tips, tri-tip steak, habanero jelly and more fun food talk. He's a real Meat Man (you can tell by his #meatman shirt) with a love of BBQ deep in his heart.
Speaking of heart, you'd never know it by the rich flavor, but Joey Victorian actually serves up low-sodium barbecue. That goes for his speciality seasoning as well. So you can indulge a little healthier at Victorian's BBQ. Your heart will thank you.

  • BBQ 040: Houston Food Roadtrip and Corkscrew Barbecue
The Meatmen took a road trip to Houston, Texas, to check out the amazing food scene there. It was a blast trying some of the best barbecue in Texas or anywhere.
In this episode your hosts Yoni and Stover stopped by the renowned Corkscrew BBQ in Spring, Texas, to chat with -- and try the food of -- Will and Nichole Buckman. The Buckmans went from making food in their home, to a food cart, and now in an fantastic brick and mortar restaurant. There's a reason they made #7 on the Texas Monthly Best Barbecue in Texas list last year.
Stay tuned for the rest of this month to hear more about the Best BBQ Show in Houston, including stops to Tejas Chocolate + Barbecue and Victorian's Barbecue.
Here's a bit about Corkscrew BBQ from www.corkscrewbbq.com:
"Our food is made from scratch daily, all of it including our BBQ sauce, Pulled Pork Sauce, Green Chile Ranch, Brines, rubs, etc. We only use real cheddar cheese, real sour cream, real butter, real ingredients in all of our foods. We use the absolute best meats you can get, Prime and all natural.  We strive to make sure our food meets and EXCEEDS your expectations.....Any restaurant can order frozen pre made food they pop in the oven or can reheat their BBQ from the day before and then be able to set exact times to be open and closed, we on the other hand cook to capacity for that day, sell it all and then close insuring everyday you get the freshest food, no preservatives, never frozen and always delicious! We are not about making a fancy restaurant with cushy seats and black tie waiters, we are all about AWESOME BBQ. Quality over Quantity!"

  • BBQ 039: Champion Texas barbecue competition cooks
Learn about BBQ and cooking from some of the best of the best on this episode. The Meat Men Yoni and Stover roamed the San Antonio Stock Show and Rodeo Cookoff on a hungry mission. In this episode, the Meatmen took a load off at the Traeger Grills tent to hang out with and interview Doug Scheiding (from Rogue Cookers, and a Texas correspondent on the BBQ Central Show) and Clarence Joseph (Mama and Papa Joe's BBQ) about competition BBQ cookoffs, cooking equipment and cooking tips for the Meatmen. We also sat down with the man behind San Antonio's Go'Shen Point BBQ (www.facebook.com/GoShenPointBBQ), the only person selling food at the San Antonio BBQ cookoff.
Here's some info on this week's guest.
    From www.traegergrills.com/pro-team/doug-scheiding (ww.traegergrills.com/pro-team/doug-scheiding):
"What do you get when you give someone with a degree in aerospace engineering a Traeger? Damn good barbecue. Doug Scheiding’s analytical background, Texas roots, and competitive nature were a winning combo when he decided to get into BBQ. He started back in 2009 when a neighbor asked him to participate in a fundraiser where they placed 3rd overall in brisket and 2nd in ribs. This event turned competition BBQ from a one-time bucket list event into a passion. Since then Doug formed a competition team, “Rogue Cookers,” whose name comes from his desire to push the limits with his recipes in pursuit of winning combinations.
Doug has earned top awards at major contests like Grand Champion at the Houston Livestock Show and Rodeo in 2015, and Finalist in 2016 and 2017, American Royal 2015, Traeger Royal Battle Champion in Pork, and Jack Daniels Invitational 1st Place in Cook’s Choice. He was able to win these titles, and more, with the help of his Traegers -- a Pro 34 and Timberline 850. Doug has made a name for himself in cooking chicken in the competition scene, but if you ask him what his favorite thing to cook is, he’ll tell you full packer Texas Brisket.
Stay tuned on @TraegerBBQ for more Doug Scheiding content."
    From www.facebook.com/Mama-and-Papa-Joes-BBQ-252464784823128 (http://www.facebook.com/Mama-and-Papa-Joes-BBQ-252464784823128):
"Over the past past 5 years, the San Antonio Rodeo has created memories that will be treasured for decades to come. 2018 was no different. This year, Mama and Papa Joe's BBQ hooked up with Trager Grills and cooked EXCLUSIVELY on the #Pro34 model.
This was a weekend double header consisting of the POTCIE Invitational Finale and the San Antonio Rodeo. We knew it was going to be a challenge. With 47 teams in the Finale, we managed a 4th Place Chicken and a 15th Place Brisket. Congrats to Kelly Curtis for the Grand and to my buddy Kevin Knight for the Reserve Grand Championship.
On Saturday, 306 teams were in attendance. Once again, our Pro 34s ran like champs. At the end of the day, we were rewarded with a 6th Place Brisket and a 14th or 15th Place Chicken. Congrats to my boy Jay Tinney for the awesome 1st Place Brisket and the Grand Championship and to Corey Flores for the Reserve Grand Championship. Congrats as well to everyone fortunate enough to hear their numbers called.

From succulent smoked brisket to our finger-licking ribs and our made-from-scratch side dishes, you'll be hard pressed to find a better BBQ experience. • BBQ 038: Huge Texas BBQ competition in San Antonio
We got our first look behind-the scenes of a competition BBQ event, where more than 300 pitmasters representing Texas BBQ and beyond set up shop in a huge lot to cook all weekend in a battle of skills and flavor. It was a fascinating look at a different side of the BBQ family than we usually see at Texas BBQ joints.
Yoni and Stover roamed the San Antonio Stock Show and Rodeo Cookoff on a meat mission. In this episode, the Meatmen sit down with Robert and Bryan from S&S Pit Crew (based in San Marcos, Texas) to talk about how competition BBQ varies from your traditional Texas BBQ joint, cooking low and slow versus hot and fast, and all the meat rubs, sauces and barbecue talk you expect from the Best BBQ Show. It was a great day. You can see photos and video from the event on our Instagram page www.instagram.com/bestbarbecue
At the San Antonio BBQ, Stover even got a chance to prove his palate by serving as a competition BBQ judge at the San Antonio BBQ competition. Unfortunately he was stuck with judging pinto beans rather than brisket. But it was a fun barbecue cookout time nonetheless.
Learn more about Robert Sierra and his BBQ crew at www.facebook.com/SSPITCREW.
Stay tuned to the next episode of Best BBQ to hear more fun from the San Antonio BBQ event. And coming soon, the Best BBQ Show will descend on Houston to cover the BBQ scene there. What's the Best BBQ near me, you ask? We have answers.

  • BBQ 036: Legendary 82-year-old Snow's Texas BBQ Pitmaster Tootsie

82-year-old Texas BBQ pitmaster Tootsie Tomanetz is the guest this week on the Best BBQ Show. Tootsie helps run the pits at one of the best BBQ places in the world, Snow's BBQ in Lexington, Texas.

You've heard about Snow's Barbecue before on the show, but this is the first time the great Tootsie has sat down to chat with the Meat Men. In the interview Tootsie talks about being world famous while still working as a janitor for a local school district and more fun stories.

When Kerry Bexley opened Snow's in 2003 he knew immediately he wanted Tootsie as his star. When Kerry was young he remembered her Central Texas meat market and her legendary ham sandwiches. When Snow's was named the best bbq in Texas by Texas Monthly in 2008, the state (and then the world) began to notice the magic made there every Saturday.

Thanks for listening! Shoutout to #meatman Clay Cowgill from Snow's for making such amazing bark, too. Enjoy our talk with a true icon of the BBQ scene.

Here's some more info on Snow's from their website:

How Did This World Famous Texas BBQ Get Started?

Kerry Bexley, owner of Snow’s BBQ, knew there was a demand for good BBQ in the small town of Lexington with a population of only 1100 people. Lexington has always been known for its Saturday BBQ. It’s just a tradition! Kerry and Ms. Tootsie Tomanetz, pit boss, discussed the possibilities in the late 90’s of opening a BBQ joint, but took no action until several years later.

In November of 2002, Kerry stopped to visit with Ms. Tootsie, kicked the ashes around, and discussed again the opening of this joint. She told Kerry that if he was serious, they better sit down and have a real “heart to heart”. They did just that, and Kerry immediately started building the BBQ pits. March 1, 2003, was the first day of business… and Kerry’s intuition was right. Good BBQ, good service, and friendly people has helped to keep the fire burning, maintaining a steady and consistent business for the last five years. Along with Ms. Tootsie and Kerry, his daughters help out each Saturday morning learning the importance of responsibility and dealing with the public.

he fire almost got out of control in May 2008 when Texas Monthly magazine named Snow’s BBQ as the best in Texas! Since that time, the entire staff at Snow’s BBQ has been doing everything possible to keep up with the demand and most important, maintain the quality. It looks like a long road ahead, but it is a challenge everyone is ready for.

  • BBQ 035: Miller's Smokehouse has meat and sweets
It's sweets and meats on the Best BBQ Show. We finally made it to Miller's Smokehouse in Belton, Texas, to try the Miller family and company's amazingly smoked meats and tantalizingly decadent desserts.
Your Meat Man hosts sat down with mastermind Dusty Miller, his mother and pie master Lisa Miller and Zach Oldham, who handles marketing efforts, to discuss all things Texas BBQ, coffee addiction and how well a big slice of pie goes with a plate of barbecue. Shoutout to all of the amazing staff at the Central Texas mainstay.
At Miller's Smokehouse, we gorged on more than four pounds of smoked meat: brisket, turkey, pork ribs; we ate tons of sides too: mac and cheese, cheesy potatoes, coleslaw and more. And the Miller family is right. A good cup of coffee is perfect with meat. The dessert was so good Stover even took home an entire buttermilk chocolate chip pie courtesy of "Mama" Miller.
"We handle it like Grandma's kitchen," Mama Miller said. "Our motto is 'we do what we want.'"

Thanks for listening! Don't forget to rate and review our food podcast so we can reach more foodies, grillmasters and BBQ hunks like yourself.
Here's what Texas Monthly had to say about Miller's:
"If Miller’s were in Austin, it might have started in a food truck. Instead, Dirk Miller began cooking in the front room of his meat-processing and taxidermy business, which opened in 2006. First came sausage wraps and pulled pork in 2008; he started “throwing briskets” on the smoker a year later. Good move, as his brisket is now one of the best in the state, with great flavor, nice bark, and juicy, melty, beautifully rendered fatty slices. In 2011 Miller took the plunge and converted the building into a full-time restaurant (the meat-processing operation was moved to another building). He built out a roadhouse-style dining area in the back to supplement the cramped front room with yellow booths (taken from a former Subway) and started cooking. The result? Miller’s serves up around five hundred pounds of its own pork-and-beef sausage each week: regular, jalapeño-cheese, and a pre-smoked hot link (they also have dried “snack sticks” and a brisket summer sausage). All of them are excellent: a crumbly yet firm well-seasoned filling in a tight, nicely smoked casing. No sauce is needed for the brisket, naturally, but it’s the perfect tangy-sweet accompaniment to the hot link on a piece of white bread. Potato salad is made elsewhere, but the beans are prepared in-house and deliciously peppery and simple, with no added flavoring or hunks of meat.
For the first couple of years, Miller’s maintained a casual, “until we run out” sort of air. But now that business has picked up, Miller and his right-hand man smoke in shifts (with one starting at three in the morning and one at eight), meaning you can show up here for supper and be sure you’re getting meat that hasn’t been sitting for very long. Pork ribs only get a turn on Friday and Saturday, which is also when the cornbread makes an appearance. Dirk’s wife, Lisa, makes both that and the pies, including coconut-pecan, which sells out every day, and County Fair, with chocolate and peanut butter chips and walnuts. Miller’s doesn’t have a billboard on Interstate 35, but it’s very close to the highway, making it an ideal place to stop on a Dallas-Austin jaunt."
