  • Italian Chicken Panini

    I admit to not really enjoying cold sandwiches, but give me a hot, crusty, cheesy gooey Italian Chicken Panini any day of the week! This one is one of my favs- use leftover, rotisserie, breaded chicken cutlets or even chicken nuggets!

    If this mouthwatering sandwich is not enough for you, I usually like to pair mine with a green salad with my homemade creamy Italian dressing.

  • Meatball Casserole

    This one dish meal comes together with literally only 5 ingredients- including frozen meatballs and dry pasta. Pair this meatball casserole recipe it with a bag of salad for a full meal in a jiffy! 

    This baked pasta dish is fantastic served with your favorite green salad with Italian dressing. It can also be paired with fresh or frozen vegetables, like garlic parmesan broccolini,  green beans, or peas. And of course, garlic bread.

  • Parmesan Crusted Tilapia

    This easy recipe for parmesan crusted tilapia takes a fairly bland fish and makes it extraordinary. Top it with a garlic butter sauce, pesto aioli or just fresh lemon wedges. 

    For starches, either potatoes or rice are good picks, but this fish also tastes great on a bed of pasta with alfredo sauce. Try my Almond Rice Pilaf or Balsamic Roasted Veggies too. Also go for green with cheesy baked kale, roast broccolini or even a nice leafy salad with ranch dressing.

  • Old Fashioned Cabbage Casserole

    This is one of those mid-1950's era recipes- the one that uses simple and budget friendly ingredients. The type that glorified a can of cream-of-something-soup. I usually don't use any of these soups, but in this case, it is necessary. I have, however, added a few other ingredients to elevate this recipe a bit- cheddar, bacon, onions and garlic. It's made commonly around St. Patrick's Day because, well, cabbage, but it can be prepared year-round and just omit the bacon for a vegetarian dish that is fit for a main entree. We hope you enjoy this Cabbage Casserole Recipe!
