It all started in 2013 with a fateful interoffice email exchange between two strangers who had never heard of each other. Soon after their face-to-face encounter, Chris and Brandon quickly learned that they had more in common than their jobs in advertising – art, food, music, and most importantly a good craft brew. Their journey began with building a small pilot brewery in Brandon’s garage, which quickly became nicknamed “The Lab.” Not sparing any expense, their brewery consisted of everything that would help them brew a high-quality product similar to the commercial breweries that they loved. This included everything from a ½ BBL brewing system, to microscopes for counting yeast cells to ensure perfect pitching rates. While they couldn’t legally sell the beer they made, they used the lab as a way to tinker with various beer recipes. Chris and Brandon became truly committed to the art of brewing and spent countless hours reading and researching to refine their recipes for the perfect brew. After years of learning from their mistakes and experimenting with a myriad of recipes in “The Lab,” they realized that they were onto something - something that sparked a feeling that coupled their passion and newfound knowledge of craft brewing. It was only natural that the next step was to own and operate a brewery of their own – Paperback Brewing Co. Every Paperback has a story to tell, and this is just the beginning. Fancy Pants is an enjoyable Kölsch with a bready nose and crisp finish.

Brewer and owner, Patrick Dunn, became enamored with craft beer and its variety in college. After a few years of trying every beer he could, he decided to learn how to brew at home. The idea of developing his own twists on styles and creating entirely original flavors sucked him in completely. After a few years of homebrewing while working long hours in the film industry and growing a family, he decided to take a leap. With family help (and patience) he started brewing professionally, and doing what he loves: making people happy.

With the help of his wife Laura on the business side, and his father as a mentor, the three launched the 15 barrel production brewery in 2016, opened a taproom to the public in 2017 and have plans to open more tasting rooms in and around LA in the near future. The Liberator is an Imperial IPA that explodes with everything hops can deliver! Juicy, Hazy, Fruity and Floral.

Sherwin and Kirk became friends way back in high school when huge baggy pants were still cool, and quickly discovered a shared love for cars and disobeying their parents. Sherwin was known as the “go to guy” when it came to fixing their friend’s cars, and Kirk was always there to help with stubborn, rusty bolts and stuck axles. But Sherwin’s love for beer and passion for brewing is what initially inspired Kirk and many of their friends to become beer fanatics in their own right. As Sherwin became more and more sophisticated with home brewing, he began to enter home brewing competitions and accrued a large collection of medals. It was only a matter of time before an ill-advised drunken promise locked both Sherwin and Kirk down a path to opening a brewery together. It started out as a joke really, then a dream, then a realistic dream. As the pieces of the puzzle started to come together, they decided to quit their careers and go all-in on building their own brewery, and on December 5, 2015 they opened the doors to Glendale’s very first microbrewery. Cat’s Pajamas - 4th Anniversary is a Bourbon barrel aged Belgian quad with slight dark fruit aromas (such as raisins) and flavors complemented by light hop bitterness but no lingering hop flavors.

Since we last talked with Trustworthy Brewing Company, the brewery has introduced a new head brewer and opened a new location on the Las Vegas strip. Zach Johnson took over the reins from Chris Walowski, who is now pursuing more personal goals, and the newer Las Vegas brewery is the first, operational brewery to be located on the Las Vegas strip. The brewery features a game room with skeeball, shuffleboard, a 60-seat raised bar area surrounded by large stainless steel serving tanks housing the brewed onsite beers, booth and banquette seating areas to accommodate casual to more formal occasions, and multiple private dining rooms with capacities of 12 to 80. Bear Temper is a barleywine with aromas of toffee, chocolate, and dark sweet cherries and flavors of heath bar, light roasted coffee, and a balanced bitterness.
