Fresh yeast is a live microorganism that starts to ferment when flour, water, and sugar are added to it. This releases carbon dioxide, which makes the dough rise. It has approximately 70% water in its composition, has a shelf life of 45 days, and must be stored between temperatures of 4 to 8°C.
When substituting yeasts in recipes, it's essential to understand each type´s strength.
Active dry yeast is at least twice as strong as fresh yeast, while Instant yeast is about three times stronger than fresh yeast.
Therefore, you should use the fresh yeast in weight three times for the same rising ability of instant yeast and two times the amount of active dry yeast.
