The vinification cellar is at the heart of the process in transforming grapes into wine, and it is here that Vincent Goumard recounts the meticulous art of winemaking, and which leads to creating each bottle of Terrasse du Larzac PDO wine. He tells of how the grapes arrive fresh from the vines and recounts their journey to the wine produced. Each winegrower makes very personal choices of the techniques to be used, which then go on to define each wine, be it whole bunch fermentation, destemming, or a combination of both, for all or part of the harvest. It is a moment where winegrowers express their savoir-faire and their personality, selecting specific parcels for each different cuvée and carefully drawing out the chosen characteristics of the terroir.

Once transferred to the vats, the grapes liberate their colour, their tannins and their aromas. Additional techniques used include pigeage (punch-down), where grapes are pushed back down into the fermenting wine, remontage (pumping over) where must at the bottom of the vats is pumped back over the semi-solid layer at the top, and choosing the length of vatting. All are an art form, and mastered through daily tastings of the juices. Indeed, it is here that the artisanal skills of winegrowers are best put to use, and which give the style and soul of each and every cuvée.

In this new episode of our podcast 'Cuvée Sonore', we call in at Saint-Jean-de-Fos (postcode 34150), a village situated at the entrance to the Hérault Gorges, which are classed as a National Heritage Site.

Both fashioned from the limestone, the Causses and the Gorges are the most visible aspects of this karstic landscape. Such geology leads to an essential yet complex movement of water resources.

To continue the exploration of the long process to create Terrasse du Larzac PDO wines, this episode shines the spotlight on the crucial role of vine roots in managing water resources.

After the frenetic springtime period, the viticultural cycle slows, and in July there is even a slight pause. Then, as mid-August rapidly approaches, all thoughts turn to the harvest. The harvest period can last for up to three months.

For winegrower Vincent Goumard (Mas Cal Demoura), harvests typically start with Syrah, and in general come to a close with the older Grenache vines.

The onset of harvest is a critical moment in the calendar, and those who harvest the grapes are carefully trained to do so, playing a central role in this viticultural adventure. As he says, 'The beginning for me, in this most important stage, is explaining that it's not just about collecting grapes, it's about harvesting the fruit of an entire year's work".

Welcome to this episode where we discover Montpeyroux (postcode 34150). Thibaut Rodriguez (CEN Occitanie) describes the diverse bird species precious to the vine and winegrowers, for example, the Eurasian Hoopoe or the Eurasian Golden Oriole.

In this episode, Vincent Goumard deciphers the period of intense activity that is Spring in old Languedoc. There are many winegrower tasks to be carried out in this season: disbudding, trellising, maintenance of young shoots, working the soil etc. Vincent Goumard explains to us that, "…This is the time when you are busy from 5am to 8pm, and you never have enough time, you never have enough resources [...] even if we were 15 people working together, you feel that not everything would be accomplished, but at the same time, you are carried away by the dynamics of the vine that tells you ‘I live, I am living, I am in good shape’ ."

In this episode, we set off to explore Arboras (postcode 34150), a village nestled on the hillside underneath the Larzac Causse. Situated in the heart of a rich and varied landscape, the vines flourish between fertile plains and the sculpted river gorges bordered by discrete riparian forests.

Vincent Goumard, winegrower at Mas Cal Demoura, describes the important process of pruning: "It is the beginning of a dialogue, the moment when you start to get to know and understand the vines, with a view to producing the wine". Undertaken during the winter months, which can often be cold even in a Mediterranean climate, it is a moment ripe for reflection, even meditative: "When you in are in the process of pruning, you have the feeling of advancing, of moving forward, whilst at the same time being truly alone, and conscious of the solitude."

With this first episode, close your eyes and imagine that you are in Jonquières (postcode 34725), where nature and vines interlace at the heart of the appellation Terrasses du Larzac. Here, the vines rub shoulders with olive trees and garrigue at the foothills of the Larzac plateau, which at its highest point is dominated by Mont Saint Baudille, the sentinel of the appellation. The cultivation of vines and olive groves in the Mediterranean garrigue results in diverse habitats rich in biodiversity.

Thibaut Rodriguez, from the Conservatoire d’Espaces Naturels d’Occitanie, explains how such varied ecosystems are vital for agriculture.

With Oliver Jullien, immerse yourself in the history of these different grape varieties grounded in local history, and which are specified in the appellation's technical specification. A handful of other grape varieties have been brought in from other regions too. Whether Grenache, Syrah or Mourvèdre, these grapes are the symbol of different cultures blending together. To conclude this episode, Olivier Jullien describes in detail the tasting of his emblematic wine "Lous Rougeos", produced from this revitalised and enchanted terroir.

C’est dans la cave de vinification, au cœur du processus de transformation du raisin en vin, que Vincent Goumard (Mas Cal Demoura) nous conte l’art minutieux qui mène à chaque bouteille de vin AOP Terrasses du Larzac. Il raconte, dans ce dernier épisode, le parcours des raisins fraîchement vendangés de la parcelle à la cave. Ici encore, chaque vigneron fait des choix qui lui sont propres et qui définiront ses vins : vinification en grappe entière ou égrappage préalable par exemple, pour tout ou partie des raisins, etc. Un moment où s’exprime la patte du vigneron, ses choix, parcelle par parcelle, cuvée par cuvée.

Dans les cuves, les baies libèrent couleur, arômes et tanins. Autres gestes vignerons, en cave ceux-ci : pigeage, remontage, durée de cuvaison sont dictés par les dégustations quotidiennes des jus. Là encore, c’est le travail artisanal du vigneron qui donnera le style et l’âme de ses cuvées.

L’aventure se poursuit ensuite avec élevage et embouteillage.

Dans ce nouvel épisode de notre podcast : « Cuvée Sonore », nous faisons une pause à Saint-Jean-de-Fos (34150), à proximité des Gorges de l’Hérault (labellisées Grand Site de France).

Causses et Gorges sont les faces d’une même pièce : le relief karstique, dont ils sont les manifestations les plus visibles. Ce relief karstique fait cheminer l’eau de manière essentielle et complexe.

Pour poursuivre l’exploration du long parcours de création d’un vin AOP Terrasses du Larzac, cet épisode met en lumière le rôle crucial des racines des vignes dans la gestion de l’eau.

Après la frénésie du printemps, le cycle viticole se prolonge, et vient l’été. Une courte pause en juillet puis, ce sont rapidement les vendanges qui se profilent autour de mi-août. Elles peuvent s’étaler parfois sur trois mois.

Chez Vincent Goumard (vigneron au Mas Cal Demoura), elles commencent par les Syrah et s’achèvent avec un vieux grenache.

Le début de cette période est essentiel : les vendangeurs, formés pour récolter le fruit d’un an de travail, jouent un rôle central dans cette aventure viticole. Ainsi qu’il l’énonce lui-même : « Le début, pour moi, qui est presque le plus important, c’est de leur rappeler qu’ils ne sont pas là pour cueillir du raisin, mais qu’ils sont là pour recueillir le fruit d’un an de travail. »

Bienvenue dans cet épisode où nous découvrons Montpeyroux (34150). Thibaut Rodriguez (CEN Occitanie) nous décrit l’avifaune précieuse à la vigne et aux vignerons dans sa diversité, avec, par exemple la huppe fasciée ou le loriot.

Changement de saison, Vincent Goumard décrypte, dans cet épisode, la période d’intense activité qu’est le printemps en Languedoc. Nombreux sont les gestes vignerons qui maillent cette saison : ébourgeonnage, palissage, entretien des jeunes pousses, travail du sol ou autres, etc..Vincent Goumard nous révèle que :« C’est le moment où vous êtes occupé de 5h le matin à 20h le soir et vous n’avez jamais assez de temps, vous n’avez jamais assez de ressources […] on a l’impression qu’à 15 on ne s’en sortirait pas et, en même temps, vous êtes porté par la dynamique de la vigne qui vous dit : « je vis, je vis, je suis en pleine forme » ».
