Skillet Chicken Bulgogi
Description
This bulgogi chicken is a quick-and-easy, but very tasty, meal. You can substitute the chicken with beef or pork for variety. It only takes 30 minutes with very few dirty dishes! Serve over rice.
Ingredients
1/4 cup chopped onion
5 tablespoons soy sauce
2 ½ tablespoons brown sugar
2 tablespoons minced garlic
2 tablespoons sesame oil
1 tablespoon sesame seeds
1/2 teaspoon cayenne
salt and ground black pepper to taste
1 pound skinless, boneless chicken breasts, cut into thin strips
Directions
Whisk onion, soy sauce, brown sugar, garlic, sesame oil, sesame seeds, cayenne pepper, salt, and black pepper together in a bowl until marinade is smooth. Cook and stir chicken and marinade together in a large skillet over medium-high heat until chicken is cooked through, about 15 minutes. Notes: You can substitute peanut oil for the sesame oil if desired. Add vegetables if you wish; carrot straws and sliced mushrooms are delicious add-ins. For a little more bite, use a peppercorn medley grinder instead of black pepper.

Key Lime Mojitos
Description
If you have an abundance of Key limes after making a classic Key lime pie, use some up to make this refreshing summer cocktail. The tart juice of Key limes makes the mojito a bit sharper and more citrusy, and the cream makes it taste like a creamy slice of Key lime pie. You’ll need a simple syrup for this cocktail, which is super-easy to make if you don’t want to buy one. You can even add some mint leaves in with it to make the mint flavor stronger.
Ingredients
1/4 c. crushed graham crackers
3 tbsp. simple syrup, plus more for glass
1/4 c. fresh mint leaves, plus more for serving
3 tbsp. fresh Key lime juice
4 oz. white rum
1 tbsp. heavy cream
Key lime rounds, for serving
Directions
Place crackers on a plate. Pour simple syrup onto another plate. Dip rims of glasses into simple syrup, then into crackers. In a cocktail shaker, muddle mint and lime juice. Fill shaker with ice and add rum, cream, and simple syrup. Vigorously shake until outside of shaker is very frosty, about 20 seconds. Fill glasses with ice and strain mojito into prepared glasses. Garnish with more mint and a Key lime round.

Chicken a la Mayo
Description
A quick and easy way to do something different with chicken. This is great served with a dijon sauce
Ingredients
1-1/2 pounds boneless/skinless chicken breasts
1/2 cup mayonnaise
1/2 teaspoon dried dill weed
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/4 teaspoon seasoning salt
1 teaspoon lemon juice
1/2 cup cornflake cereal
Directions
Preheat oven to 400 degrees. Pound chicken breasts to 1/4 inch thick. In a medium bowl, stir together mayonnaise, dill weed, garlic powder, black pepper, seasoning salt and lemon juice. Mix well. Dip chicken breasts into mayonnaise mixture (let excess drip off), then dip in cornflake crumbs to coat well. Place coated chicken in a lightly greased 9x13 baking dish. Bake for 20 minutes or until chicken is lightly browned and no longer pink inside.

Description
A light cocktail that is low in sugar but high in taste!
Ingredients
Crushed ice
1 tbsp. lime juice, fresh or bottled, more if desired
2 oz. tequila blanco
6 oz. sparkling mineral water, like Topo Chico
Lime wheels and bendy straws, for serving
Directions
Fill a glass one-half full with crushed ice. Top with fresh lime juice, tequila, then the sparkling water. Garnish the glass with a lime wheel and drink with a straw, if you like!

Irish Cream
Description
Russ and I occasionally venture into the world of making flavored liquor (like Amaretto, Kahlua, etc). While we have not ventured into Irish Cream, YET, this is a recipe that has been stashed backed with tons of fantastic reviews. It is definitely a recipe open to alterations. And, taste as you go… it might be too sweet for your preference. Only add 1 can sweetened condensed milk originally, then add more as you deem necessary
Ingredients
1 (750 milliliter) bottle Irish whiskey (You can substitute bourbon or brandy for the liquor, if you so choose. Or use some flavored Crown Royal, maybe splitting it with something else… or using up an almost empty bottle)
10 ounces melted milk chocolate chips (you can substitute butterscotch, peanut butter or vanilla chips; if using semi-sweet or dark chocolate chips, it will make the Irish Cream less sweet; or use 3-4 tablespoons chocolate syrup)
1 or 2 (14 ounce) cans sweetened condensed milk
2 (12 fluid ounce) cans evaporated milk
2-1/2 cups heavy cream
1/4 teaspoon instant coffee granules (or 1/2 cup of double strength brewed coffee)
1 Tablespoon Pure Vanilla Extract
1 Teaspoon Almond Extract
Directions
Pour a small amount of whiskey into a large bowl. In the top of a double boiler, melt chocolate, stirring constantly until smooth (skip this step if using chocolate syrup. To skip double boiler completely, heat a small amount of milk with chocolate chips in the microwave until melted, in 10-15 second increments between stirring. WATCH CAREFULLY to keep from scorching). Mix melted chocolate with whiskey in the bowl. Gradually stir in sweetened condensed milk and evaporated milk. Stir in cream, instant coffee granules (or brewed coffee), and remaining whiskey. Pour mixture into three 750-milliliter bottles, seal, and store in the refrigerator. Let rest, without consuming, for at least 1 month before use. Gently shake bottle every few days to keep everything mixed up. To serve: shake the bottle well; serve in small glasses over crushed ice. Yield: 3 750-milliliter bottles

Description
To celebrate St. Patrick’s Day, enjoy this tasty minty concoction!
Ingredients
1 ounce Baileys Irish Cream
1 ounce green Creme de Menthe liqueur
1 ounce vodka
1 ounce half & half
Ice
Whipped Cream - Optional
Chocolate Shavings (or crumbled chocolate cookies) - Optional
Directions
Fill cocktail shaker with ice. Add ingredients; cover and shake well. Strain into a martini glass. Garnish with whipped cream and chocolate shavings as desired.

Mushroom Ravioli with Gorgonzola Cream Sauce
Description
I served this for dinner last week, and Russ fell in love with it and requested that I share the recipe with everyone! It’s very tasty.
Ingredients
1 package (19 ounces) “Johnsonville” Italian Sausage Links, cooked and then cut into slices.
2 cups heavy whipping cream (an extra cup may be needed to thin the sauce)
Salt and freshly ground black pepper to taste
1 heavy pinch cayenne pepper, or to taste
1 package (18 ounces) “Rana Family” Mushroom Ravioli (in grocers refrigerated case) (or substitute your favorite ravioli)
5 ounces crumbled Gorgonzola cheese
2 tablespoons parsley
1/2 cup freshly grated Parmesan cheese
Parsley to garnish
Directions
Place a heavy skillet over medium heat. Place whole sausages into skillet and cook until lightly browned. Add 1/2 cup water and simmer links for 10 minutes. Remove links and set aside for the moment. Dump out water and wipe skillet out. Return skillet to heat and pour cream into skillet, bring to a simmer, stirring occasionally. Season with salt, black pepper, and cayenne pepper. Bring a pot of salted water to a boil. Pour ravioli into boiling water and cook, stirring occasionally, for approximately 5 minutes. While pasta is cooking, slice sausage links and then add the sliced sausage to the cream mixture. Mix in Gorgonzola and Parmesan, and stir until melted. Once pasta is cooked, drain and gently stir it into the Gorgonzola Mixture. Place pasta mixture into serving bowl and garnish with additional parsley. Serve with garlic bread.

Bellini
Description
An easy Bellini recipe! I’m a huge fan of Bellini’s, and this is great for summer… or for something sweet after a nice Italian dinner.
Ingredients
1 Bottle (3 Cups) Prosecco
3 Cups Frozen Sliced Peaches
1/2 Cup Peach Juice or Nectar (Optional)
Fresh sliced peaches (optional - garnish)
Directions
Add the Prosecco, peaches, and peach juice to a blender. Cover and blend on high speed for 1-2 minutes until smooth. Pour into glasses and serve immediately garnished with fresh peach slices if desired. NOTE: Prosecco is standard, however, you can use any sparkling wine or champagne that you like best for this cocktail.
