     I had the pleasure of speaking with Dr. Amanda Adkins, a physician double board-certified in Internal Medicine and Lifestyle Medicine, who shares her passion for helping women prevent and possibly reverse chronic illnesses through a plant-based nutrition lifestyle. Throughout the episode,  Dr. Adkins talks about how incorporating more plant-based foods into your meals can have a positive impact on your health and the environment. By reducing or eliminating animal products, you can lower the risk of chronic diseases such as heart disease, type 2 diabetes, and certain cancers, while also reducing our carbon footprint. 

    Dr. Adkins provides helpful tips and powerful insights for making the transition to a plant-based diet easier, such as focusing on the foods you enjoy, experimenting with different cooking methods and flavors, and not being too hard on yourself if you slip up.  The conversation was informative and inspiring.     In this episode, I had the pleasure of speaking with Sharon Palmer, the Plant-Powered Dietitian  and the author of several plant-based cookbooks including "California Vegan" and "The Plant-Powered Diet". We discuss the benefits of frozen vegetables and how they can be a cost-effective and nutritious addition to a plant-based diet. Sharon shares some great tips on how to properly store and prepare frozen vegetables, as well as some delicious and easy meal ideas that can be made with them. 

    We also touch on the misconception that plant-based diets are bland and boring, and Sharon emphasizes the importance of using herbs and spices to add flavor to meals. She also highlights the variety of plant-based cuisines from around the world that are full of flavor and texture. 

    Throughout this episode, Sharon emphasizes the importance of having an open mind and being willing to try new things when transitioning to a plant-based diet.  She also provides some great resources for listeners who are interested in learning more about plant-based eating, including her cookbooks and her website.  It was a great conversation full of valuable information for anyone interested in incorporating more plant-based meals into their diet.

    I had the pleasure of speaking with Dr. Ruby Lathon on the Plant Based Curious podcast. Dr. Ruby is a holistic nutritionist who healed herself of thyroid cancer through a plant-based diet. She shares her journey towards a healthier lifestyle and how she overcame her cheese addiction, which is one of the biggest obstacles for people transitioning to a plant-based diet.

Dr. Ruby shares how she learned to make delicious cashew cheese and other plant-based alternatives to her favorite foods.  We also talk about the documentary "What the Health" and how it's important to educate yourself about the science behind a plant-based diet.  Her food delivery service, Ruby Red Vegan, offers organic, plant-based meals in the DC, Maryland, Virginia area, and she shares tips on how to veganize your favorite recipes.

  • From Sick to Plant-Based: Diane's Journey to Health and Conscious Living

    In this episode of Plant Based Curious, I share my personal journey from sickness to plant-based living. During my interview with Yvonne Pierre, host/producer of the Let’s Talk Healing podcast, I discussed what inspired me to adopt a plant-based lifestyle. I shared that I had hypertension at a young age and was getting sicker as I got older, despite not realizing that food played a significant role in my health. After a doctor's visit, I learned that my gut issues were related to what I was eating, which prompted me to go plant-based. Over time, I adopted a vegan philosophy, which helped me connect with animals and the environment. 

    I launched the Plant Based Curious Community to create an environment where people can learn more about the benefits of a plant-based lifestyle and make informed decisions about their health and the environment.
