In this Quick Bite, Aimee sits down with David Carroll, Owner of Red State Barbecue in Lexington, KY. After we accomplished at the Run The Bluegrass, we decided to e xplore the food scene in Lexington and we had a hankering for meat...Lots and lots of meat. Red State Barbecue did not disappoint!
We tasted our way around the menu with tender, smoky ribs with a slightly sweet dry rub bark, melt-in-your mouth brisket, juicy chicken, a coarse-ground andouille sausage, a finely-ground beef red-hot link with some kick, and wings that could best be described as the love child of buffalo and BBQ! And the sides! This place is a MUST-TRY on your next trip through Lexington. It's easy if you are driving too, because they are located just a couple minutes off of I-75.
