Sausage and Green Chili Corn Chowder
Serves 6-8
1lb regular ground sausage
1lb hot ground sausage
1 small onion chopped
2 12-oz bags frozen whole corn
2 T flour (shake over)
2 14oz cans creamed corn
1 small can chopped green chiles
2 15oz cans diced potatoes drained
2 cups chicken stock
2 teaspoons salt
2 teaspoons pepper
Pinch of cayenne, optional
1 12-oz can evaporated milk
1/2 cup heavy cream
1/4-1/3 cup chopped parsley
Brown sausage til almost cooked through; add chopped onion and continue to cook til sausage is no longer pink and onions are tender. Stir in frozen corn. Sprinkle with a little flour; stir to coat. Add in creamed corn, green chiles, drained potatoes, chicken stock, evaporated milk, and seasonings. Bring to a low boil. Add heavy cream. Simmer uncovered on low heat for 30 minutes til reduced and thickened and creamy, stirring often. Taste and season as needed!
