The whisky industry is steeped in centuries of tradition be it here in the US, in Scotland, Ireland, and more recently in the 20th & 21st centuries in dozens of countries around the world.

The 21st century, however has brought on a new phenomenon: accelerated aging of spirit or, in the case of Bespoken Spirits, "craft aging". Will this new process replace centuries of tradition or live side by side it comfortably.
