From honey to doublestock to eggrolls and microwaved rouxs, the first dozen episodes of The Gumbo Show have taken us to places we never would have imagined. Chef Amy Sins aka the "Wizard of Roux" was our very special guest on The Gumbo Show this week. In addition to owning a thriving culinary business in New Orleans, she is also a cookbook author, a celebrity chef, a public speaker and historian of Louisiana cuisine. We really enjoyed our conversation with Chef Amy and more importantly learned some brand new Gumbo tips.

If any one man is the foremost authority on Gumbo, it is Brett Anderson. Through two decades as a food writer in New Orleans, he has sampled more gumbos than most people will in a lifetime. And he's shared his knowledge with the masses: in 2004, he wrote: "Gumbo, Louisiana's Bowl of Wonder," a definitive guide to the state's signature dish. Some 15 years later, he wrote the coda to that story for the New York Times: "Gumbo, the Classic Louisiana Dish, is Dead. Long Live Gumbo," chronicling the new influences and ways chefs were putting their own touches on the dish. Brett joined the Gumbo Show to discuss his experiences with gumbo, what he's seen, where he loves to get a bowl and why gumbo is so interesting.

Far in the north, a lone man fights a courageous battle. Battling withering elements and an unaccustomed populace, Gumbo Boi Robert Lee brings Cajun flavors to the people of Duluth, Minnesota. In this episode, Gumbo Boi tells Faimon and Dave why "Cajun Brats" don't work, why double stock does, and how cooking on his front porch spawned an entire business.

Grab a pen and take notes. Gale Levy Boudreaux aka The Creole Cajun Queen dropped some serious gumbo knowledge on this week’s Gumbo Show Podcast. Gale was born and raised in New Orleans, but now lives in the Dallas area where she owns Creole Cajun Queen Catering. Gale is serious about her gumbo and even won a gumbo contest judged by one of our co-hosts. We are so excited to have her as a guest on our show.
