MY WHY:

I have always loved working in the food industry, server, bartender, and restaurant business. Growing up on a large farm in the Midwest has given me inspiration to help others learn how to eat wisely and how to spend money sensibly on food. With a full-time job and kids, I feel I’m relatable when it comes to all the above on what most of us are looking for in life. 

WE ARE MAKING: Juiciest Steak 🥩

Ingrediants:

• 1 flat iron, sirloin, round cut of steak
• 1 package of cherry tomatoes
• Baked Potatoes (2)
• Mozzarella Pearls
• 1 onion and whole mushrooms
• Olive Oil

Instructions:

• Pre-Cook your baked potatoes (I use an air fryer to soften)
•  Grab your cast iron pan get it HOT 
• Add some oil to sauté your mushrooms and onions (set aside)
• Coat your steak in olive oil and seasonings
• Sear the outside of the steak in the HOT pan (30 sec each side)
• Turn oven on to broil LOW
• Return steak to cutting board 
• Slice the steak so you see the red
• Grab your cast iron skillet
• Add the steak in the middle of the pan (I use a flat pan with short sides)
• Pour your tomatoes all over the top, piercing each one (you will find out why).
• Add you baked potatoes (slice the tops open, add some tomatoes)
• Add your onions/mushrooms next to your steak and potatoes
• Pour the mozzarella pearls all over, oil included
• Set pan inside oven on lowest rack
• Allow to broil for about 10 minutes (keep an eye for melting cheese and don't burn)
• Once the cheese is fully melted and you see the red of the steak turn mo

Ingrediants:

• 1 package of NORI seaweed
• 1 cup of rice (day old or freshly cooled)
• Tuna 
• Cucumber (whatever you want on your sushi
• Avocado
• Shrimp
• Sriracha Ranch Mix
• Any sauce, Amino Acid, Soy Sauce
• Sesame Seeds

Instructions:

• Cook rice 1:2 water, let cool on pan when done
•  Lay NORI slices across the rice (cream cheese can go before if you want)
• Add any and all toppings, sliced cucumber 
• Add the sesame seeds
• If you want it warmed up, put into the oven 10 minutes
• Add sauces across the top
• Slice. Eat.
• Enjoy!

WE ARE MAKING: Cast Iron Skillet Pizza 🥘 (Low Carb)

Ingrediants:

• 1 set of low carb tortilla wraps
• Beef (I use our person Elk meat)
• Salami 
• Olive Oil
• Cheese of your choice (mozzarella  pearls can be used)
• 1 x diced onion
• Sriracha Mayo Mix
• Any Size of tomato (for the sauce)
• Garlic Cloves or Minced
• Pesto or Basil Leaves
• Itallian Spices

Instructions:

• Slice, large tomatoes or use the cherry sized ones
• Basil Leaves, Garlic, Olive Oil (tish) 1 cup of water, Pesto 
• Blend that all up .... set aside (if runny drain off some liquid)
• Cook meat into small mini meatballs, rinse, set aside
• Chop the salami
• Shred the cheese or use the mozzarella pearls
• Add one wrap to a well oiled skillet (wipe off any excess oil first) 
• Add the sauce and ingredients how you like, keep pan at med low heat
• When cheese is melted, remove let cool, add saucy spread, fold and devour
• Enjoy!

WE ARE MAKING: Twisted Penne Pasta 🥦

Ingrediants:

• 1-1/2  box of Penne Pasta
• Broccoli Crowns
• Musrooms
• Green Onions, Garlic
• 1 packet of onion soup mix
• Sour Cream or Cream Cheese
• Any spices you want

Instructions:

• Slice, Mushrooms and Broccoli
• Boil Noodles, save the water, set noodles aside
• Heat your pan to medium high
• Add 1-2 cups of (boiled water)
• Add the packet of Onion Soup mIx and green onions
• Turn heat to medium low
• Add the noodles 
• Add the broccoli and mushrooms, cook until slightly soft
• Turn pan down to low or off
• Add the cream, stir let rest for 5-10 minutes
• Enjoy! 
• Hint: if you use cream cheese, soften in microwave for 30 sec to break down the fat aminos so it will not curdle in mix.

• Green Olives (stuffed with blue cheese Mmmm)
• Black Olives
• Berries
• Avocados
• Cherry Tomatoes
• Assorted Cheese
• Assorted Meats
• Fresh, French Bread Loaf
• Balsamic Vinegar
• Olive Oil
• Fresh Mint and Basil 

Instructions:

• Slice, Lay, and Roll your ingredients
• Tear your bread into small chunks 
• Rub your Mint and Basil Leaves to release oils
• Have toothpicks in a small jar for easy access
• Place all on a serving tray for the patio
• Enjoy!

Ingrediants:

• 1 or 2 or 3 bags of rice (I like Brown Rice but any works)
• Salt
• Large Pot to Boil Water
• Pressure Cooker Works Too

Instructions:

• 1:2 meaning, 1 cup of rice to 2 cups of water
• Boil or Pressure Cook until Rice is Medium NOT MUSHY
• Drain, Rinse, Lay on a sheet pan
• Allow it to cool, no heat at all
• Place your desired amount into freezer bags 
• Lay flat in your freezer and when you need a quick meal that includes rice grab one out to rewarm in your meal, yes even sushi rolls 🍣
• Enjoy!

Ingrediants:

• 1 small eggplant  🍆
• Salt
• Blue Cheese, crumbles
• 1 egg, soft boiled or not
• Sun Dried Tomatoes
• Garlic Fresh
• Mushrooms

Instructions:

• Slice the washed eggplant into 1/2in slices
• Add salt to both sides of each slice
• Set aside to allow releasing of moisture
• Mix up your toppings in a bowl while you wait 
• Pat dry on both sides with a paper towel
• Bake 350, 10 minutes alone for extra crisp 
• Add ingredients to the top of your eggplant slices
• Bake 350, 10 -20 minutes allowing toppings to bake
• Let cool and enjoy!

WE ARE MAKING: Pretzel Snacks 🥨 NO BAKE!!

Ingrediants:

• 1 bag of Pretzels  🌰
• 1 bag of butterscotch chips
• 1 bottle of chocolate syrup
• 1/2 stick of butter or coconut/olive oil
• 1 jar of your homemade nut butter (S2, E13) or organic peanut butter

Instructions:

• Mix, butter (oil) with the bag od butterscotch chips in a pan on low heat let melt slowly
• Add the jar of nut butter or peanut butter in to melt too
• Add the pretzels 1/4 of a bag at a time (helps from overlapping)
• Once covered remove with a large fork, lay neatly on a pan covered with wax paper, allow them to cool
• Drizzle chocolate syrup all over them to your liking
• and enjoy!

WE ARE MAKING: Homemade ALMOND (or nut of your choice) Butter 🌰

Ingrediants:

• 8oz. of unsalted (plain) almonds or your choice of nut  🌰
• Ninja or a strong blender
• Filtered Water (1 cup maybe more)
• Coconut Oil if you need
• Stevia or your preference of sugar 5-10 tbl or packets

Instructions:

• Mix, liquid first, then sugar, oil, nuts into the blender
• Add more water as you need, maybe some oil too
• Store in fridge for 2-3 weeks OR if sealed in the pantry
• Once mixed, place into jars, if you want to seal them put them into a pressure cooker or pot of water to heat up, cool to seal
• and enjoy!

Ingrediants:

• 1 medium can of hominy/corn/white beans/lentils
• 1 large onion (white or red)
• Radishes
• 3 Avocados
• 1-2 bunch of Cilantro
• 3 Limes or more!
• Lots of Cumin or a little - however you like it!
• Seasonings you like ( I used Chili Powder and Cayenne Pepper, you can use white or black pepper, or hot sauce you like)
• Homemade Broth (S2, E6)
• Meat of your choice if you prefer (pre cooked, otherwise the grease will be in your dish).
• Soft Corn Shells for dipping

Instructions:

• Chop your veggies
• Heat a 1/2 cup broth to simmer 1/2 onion for juices and flavor
• Bring to a nice simmer add everything else except the avocados and radishes (if slow cooking) otherwise add at the end prior to serving.
• if you want: add in your choice of cooked meat or tofu
• Once this is brought to a nice simmer for 10 minutes it is ready!
• add any more spices for flavors (sour cream for some, jalapenos)
• and enjoy!
