Koji Process. You may have heard of it, and we wouldn't be surprised if you haven't. it's a fairly new experimental coffee processing method, and it's innovative. Over the last decade, we've seen experimental processing become more and more popular yielding some very interesting flavor profiles in coffee that previously were not possible.
