After venturing downunder to learn her trade Ahana Dutt (Raja) found herself in the kitchens of some of Sydney’s best restaurants. After years of rising the kitchen ranks an opportunity arose to lead a team and explore the food of her family and heritage in a modern setting, which she describes as ‘unapologetically Indian’.
