After cutting his teeth at one of Sydney’s iconic seaside establishments Calvin Katz (Ripples Chowder Bay) got hooked on the processes and techniques of cooking, from breaking down whole fish and animals to using everything to connecting with growers. After working in some of Melbourne and Sydney’s best restaurants he now finds himself over-looking the deep blue again at another iconic restaurant, but tasked with running his own kitchen and taking it into a new era.
