Happy New Year, Foodie! I hope you had a wonderful holiday.
I'm feeling nostalgic today. Every New Year my grandfather would make Black Eyed Peas and Stewed Tomatoes. Today, I'm taking his traditional dish and doing something different. We're making Crispy Black-Eyed Pea fritters with a smokey tomato compote. This dish is 100% vegan and makes about 5 to 6 fritters. Let's get into it!
Ingredients
1 15 oz can of black-eyed peas
1 cup of whole-wheat panko bread crumbs
2 tablespoons of olive oil
2 tablespoons of minced garlic
Salt and Pepper to Taste
For the compote
1 large tomato diced or 1 can of tomato paste
3 tablespoons of liquid smoke
a pinch of salt
1 tablespoon of sugar
1 teaspoon of cornstarch
Water or veggie broth as needed to stretch it out.

1 half of an onion (Diced)
