As I got older and dove into the worlds of coffee and wine, I realized that similarly chocolate has a culture and world of it's own. It didn't take long for me to realize that the mass produced chocolate that I would feast on as a kid no longer fit the way my foodie palate was expanding. This led me to learn more about what makes chocolate...good chocolate.
