It's the year of the rooster in the Chinese calendar. And though officially Chinese new year was on January 28th, the celebration lasts 15 days and we're continuing to offer up some incredibly tasty dishes to celebrate the holiday. This dish is Dongan Chicken. The chicken is first poached in an aromatic broth and then cut into pieces. Those pieces are stir fried with ginger and chilies, black vinegar, and little of the braising liquid. Finally scallions and toasted sesame oil top it all off.
