Andrew Seccull's Dill Mayo
1/2 bunch of dill
3 egg yolks
2 tablespoons white vinegar
squeeze of lemon juice
1/2 and onion
2 tablespoons hot water
250 - 300 grams olive oil (not virgin)
2 teaspoons dijon mustard
salt and pepper
Put all ingredients (except for the oil) into a whizzer and blend for 2 minutes. Slowly pour in the oil while continuing to whizz until you reach the consistency required.
