One of my BIGGEST weapons in fighting ADDISON'S DISEASE is my nutrition. I have tested it OVER and OVER again. How I fuel my body has a direct impact on my illness and my quality of life. Years ago, I am talking decades, I saw food as the enemy. Bad body image, refused to eat...breakfast not a chance. I was never hungry in the morning so why eat?
Then I had kids...my perspective changed. I needed to be a role model for them and I wanted HEALTH. I have a degree in nutrition. I knew breakfast was key. I started slowly, eating just a small portion in the morning. Soon, my energy was more stable during the day, better mental focus and I was HUNGRY in the mornings. It is NORMAL to be hungry. We should fuel our bodies with proper portions, LIVE LIFE, refuel, LIVE LIFE, refuel.
Breakfast for this pickle is usually 3 eggs, 1/2 cup steel-cut oats and a bit of healthy fats (walnuts, almonds or avocado) I deserve to feel my best. I deserve to be as strong as possible and FIGHT ADDISON'S DISEASE.
PICKLED STEEL-CUT OATS
1/2 cup steel-cut oats (I go to the BULK STORE with a coupon)
1 1/2 cups water
Set on low in a small crock pot overnight.
I usually cook a double batch and have oats for 3-4 days.

Focus on your health and high-quality foods for your meals, start small, avoid processed foods as much as possible and learn proper portions.
