Oyster Vinaigrette with Makrut Lime Leaves

Red wine vinegar

Shallots – finely chopped

Salt and pepper

Tiny bit of Water to take the edge off

Add a few slivers of macerate lime leaves (very thinly sliced – cut either side of the stem to remove the tough bit).
