Tarragon Salad Dressing

1/4 cup sugar

1/2 bunch of chopped chives

1 clove of crushed garlic

430mls virgin olive oil

1 tablespoons dijon mustard

160mls taragon vinegar

1 tablespoon lemon juice 

1/4 bunch chopped parsley

12 chopped paragon leaves.

Stir / mix well. Makes enough dressing for 2 large salads. Caro recommends leaving out the fresh herbs as the plain dressing will keep well in the fridge for ages, then add the fresh herbs just before serving. 

Is delicious with just butter lettuce and lots of avocado.
