Experimental Brewing episodes

  • Episode 28 – Uncommonly Common
On this pre-Turkey Day here in the US, we found ourselves back in Portland in this episode and we're at a brewery right up Drew's alley!
We start in the pub with a brief discussion of what fine beers we'll be supping on while we're stuffing ourselves silly. We also look at some charity from No-Li Brewing, a rather "innovative" beer addition to the Not Your Father's lineup and Mike Tonsmeire's Kveik experiments.
In the brewery, we examine the speciality malt market and what it means for the tide of craft beer styles from a global perspective and Drew talks about revisiting one of his favorite projects from the past with White Labs Zurich Lager strain.
In the lounge, we visit with Sean Burke at Common's Brewing where we explore their farmhouse centric approach and how they grew into a beautiful space with strange equipment.
For a quick tip, we share a brief note on using Hop Extracts efficiently and cleanly. (And what not to do with them!)
We tackle more of your questions in our Q&A segment before closing you out with two of Drew's latest finds - HBO's Westworld and a Beastie Boys / Daft Punk Mashup that is pretty damn awesome.

  • Episode 27 – One Year of Silliness
Has it really been one year? Yup - The first episode of Experimental Brewing appeared on November 11th of 2015. The tricky part is we taped that first show at least three times. We wanted to get it right as possible coming out of the gate. We're still not there yet, but with your help, we can do it! Take our survey, leave us a review on iTunes, etc.
But first, in this episode we revist some of our favorite pieces of the first year of Experimental Brewing. We talk briefly at the pub about some recent news and happenings and then straight into the dream sequences as we revisit the world of data outliers, talk to Lew Bryson about Session Beers, Denny and Drew getting their learning on, talk weird beers with Russell Everett, Saisons, prove we can't taste anything with Marshall at HomebrewCon and close out with less than laconic Rodger Davis of Faction Brewing. We think we even got all the beeps in place for him this time!

  • Episode 26 – New England Righteousness
One full year of Experimental Brewing is in the books! (So much editing, so much umm and ahhs)
But that’s beside the point - on with the show! We tackle some user feedback around Drew’s keg purging methods and Denny’s feelings on Nugget hops. And then it’s into the pub where we tackle the big news about ABI’s acquisition of Northern Brewer/Midwest. We’re puzzled - are you puzzled? Join us in being puzzled! Drew talks about his experience with Cask Marque and finding righteous beer bargains.
In the brewery, we talk about the beauty and performance of JaDeD Brewing’s chillers. Seriously, these things are great.
In the library, a little comedy courtesy of McSweeney’s from a listener and a new podcast from the Master Brewers Association of America for your actual knowledge.
In the lab, we discuss the results of our first New England IPA experiment - Wyeast 1056 vs. Wyeast 1318. Can tasters taste a difference? What about the haze? The Hop character? Where do we go from here.
And it’s a twofer in the lounge as we just finished a quick trip to the Portland/Vancouver area to talk at our sponsor Brewcraft USA’s RetailerCon. So we started our trip by talking with the folks at FH Steinbarts about their shop and their community’s recent speakeasy loss. And then we get into a Pineapple Kolsch with Larry Clousner, great friend of the show and partner at Pono Brewing.
We close out the show with Drew’s recent reading about some of the deep seated organized crime and corruption of LA in the 1920’s and 30’s with “A Bright and Guilty Place” by Richard Rayner.

  • Episode 25 – BrewTan Your Questions Away
Second half of the Q&A episode is now ready for your listening and "learning" pleasure!
But first, before we dive into your questions, we're back with your feedback from the first Q&A episode and some Barley Crop Reports that we've cribbed from our friend Teri Fahrendorf and Denny reports on his eggs, because they're expensive!
Then we grabbed a chance to talk with multiple (no, really, multiple) award-winning homebrewer Joe Formanek. Normally we'd subject Joe to the whole twenty questions routine because seriously the man's impressive, but you can go read his profile in Homebrew All-Stars until we get back to that. Why the wait? Because Joe has an interesting new brewing product that he's helping spread the word on - Brewtan B. What is Brewtan B? Well, listen to the episode and find out.
Speaking of finding out - we're happy to announce our next experiment - this one is completely focused on figuring out if Brewtan B does what it says on the tin. (And in that spirit we're giving our IGORs some time to have some fun as well)
Then we get into your questions. For convenience's sake we've divided the questions into general topic categories. This episode we tackle Packaging and Philosophy Questions. We even have more "live" callers!

  • Episode 24 – We Answer Many Of Your Questions
You know how we said we were getting back to our "usual" format? Ha! Today we blow it up again because y'all sent in so many great questions. So many in fact, that we've split the Q&A into two episodes.
But first, before we dive into your questions, Denny grabbed a seat on a bus next to Gary Glass, Director of the American Homebrewer's Association to talk about the AHA's new phone app - Brew Guru - and why you want to put it on your magical sci-fi pocket computer.
Then we get into your questions. For convenience's sake we've divided the questions into general topic categories. This episode we tackle Fermentation, Ingredients and the Mash. And hey, we even have our first "live" caller! Aren't we fancy?
Don't forget to come back for Episode 25 when we tackle even more questions (plus some other cool content!)

  • Episode 23 – The Great Hop Whirlpool of Bainbridge
Busy Episode this time! Crammed with like - additional feedback to last episode's Staling results. Seems like some of you have been using scary old grain! In the pub we stop and talk a while about Denny's Hop School experiences (more on those later), the law in California and the crushing "loss" of Bosteels Brewery to ABI. (Maybe they should be Boo-steels now?) and one brewery's response to the recent PR campaign to try and make everyone feel better about the buyouts.
We swing by the brewery to talk about Drew's recent Saison yeast tasting - which you can find online. In the library we visit a couple of papers on yeast genetics.
In the lab, we're happy to announce our next great experiment - brought to you by our sponsors, the American Homebrewer's Association and NikoBrew.com. We're going to get a whole squad of homebrewers making up some hoppy beers and having them analyzed and tasted! See the recipe and experiment writeup for details. We're super stoked for this!
Then Denny goes and talks to the folks out of Whirlpool's W Labs about their soon to launch all in one fermenter, fridge, kegerator - the Vessi. Then he heads off to the posh environs of Bainbridge Island WA to talk with Russell Everett of Bainbridge Brewing. Listen and find out what stout and noodles have to do with each other.
Then in Something Other Than Beer - we lament 2016's continuing losses - this time with Gene Wilder. Then Drew shares Sia's new video for "The Greatest" which is a bit of a gut punch. Lastly, to leave on a happy note - Drew also mentions Comixology for all your comic enjoyment.
Finally Denny drops a tip about how best to dry your hops. The key - a little bit of heat, but not too much if you want to preserve all the good oils!

  • Episode 22 – Anything But Stale in Wisconsin
This episode we talk about two of our favorite online communities and their upcoming distributed competitions. We stop in the pub to talk updates to the North Carolina Legal Situation and a new homebrew rights situation in Nebraska. (See why it's important we keep fighting the legal fight?) Denny previews the upcoming Hop School and Drew talks about visiting Boulder CO and the AHA/BA offices. In the Brewery, we talk about the impending pumpkin crisis - ok, crisis to some and Drew's visit to Hop Barley and the Alers and their annual auction.
We revisit our Staling experiment - can you brew with pre-crushed malt that's been sitting for a month? We review the results and discuss other possible avenues of exploration. After that Denny's back in Milwaukee talking with James Beard winning chef Justin Aprahamian of Sanford Restaurant in Milwaukee, Like Minds Brewing in Chicago and the new brewpub back in Milwaukee. Denny delves into the world of fine food and fine beer. Find out why Like Minds originally opened in Chicago and how they came back home.
Then in Something Other Than Beer - Drew drops a Youtube show that really is a charming, whimisical love letter to Paris. And staying with Youtube - Drew's quick tip - well, it's not so quick but it's the video of his talk Brewing on the Ones from the National Homebrewers Conference.

  • Episode 21 – The Myth of Mino
This episode we talk about two of our favorite online communities and their upcoming distributed competitions. We stop in the pub to do a little talk about mashing obsessions and the law and homebrewing. We head to the library to talk about Scott Janish's article on DMS, causes and cures and his test. Denny and I talk about his favorite homebrew myths before he heads to the land by the waters - Milwaukee - where he talks to Mino Choi, a homebrewer with a culinary obsession and a couple of 50 point entries under his belt. Mino talks his process, his designing and some agressive techniques he uses to drive his fermentations.
We come back to our "Something Other Than Beer" segment with Denny enjoying spending time with Cecilia Chiang, the Chinese cuisine equivalent to Julia Child and we close out with Drew circling back to a lesson from earlier in the show!

  • Episode 20 – Ferment, Drink, Sellout, Repeat
This episode we start getting back to our regular podcast format (ok, mostly), but we start in the pub where we talk the massive changes in the beer industry last week because this time they're near and dear to Denny's heart. From there we go off to the lounge with an interview at San Francisco's Ferment Drink Repeat (who for the record are not sellouts - they're awesome). What sorta crazy person creates a homebrew shop and brewery? Well, listen and find out!
After the lounge, it's time for a Q&A where we tackle brewers questions about Saison, getting their Red on, style guidelines and why sometimes brewers can be dicks. We come back to our "Something Other Than Beer" segment with Netflix inducing massive nostalgia in Drew and we close out with a tip from a South African listener about how to deal with the whole multiple keg carbonation issue.

  • Episode 19 – Brew Like An AllStar
This episode starts with a brief stop at the brewery where we walk you through some of the newest things we're playing with! (Like Drew's new mill - review on the site)
Then we ask - What happens when you get a whole bunch of brewers together and have them open up their breweries? Well, if they belong to the Falcons then it becomes their annual event "Brew with a Falcon". Denny tests out our spiffy phone interface and calls five brewers in the Los Angeles area as they're brewing. At least one of them will be familiar to you! See what sort of crazy beer is being made!
Then it's time for our last turn around the block in Charm City as we present our HomeBrewCon presentation - "How To Brew Like An All-Star". The audio is courtesy of the American Homebrewer's Association. Did you know that all members of the AHA get free access to audio recordings and slide decks from all of the Con's presentations? To join the AHA just click on the AHA logo on our homepage! Support the podcast and the group that fights for your rights as a homebrewer!
