The Dough

  • Unsalted Butter: 1 cup (2 sticks), softened

  • Brown Sugar: 1 cup, packed

  • Granulated Sugar: ½ cup

  • Eggs: 2 large, room temperature

  • Vanilla Extract: 2 ½ tsp

  • All-Purpose Flour: 2 ¾ cups

  • Unsweetened Cocoa Powder: ¼ cup

  • Baking Soda: 1 tsp

  • Salt: ½ tsp

    The Spices & Mix-ins

    • Cayenne Pepper: ½ - 1 tsp

    • Espresso Powder: ½ tsp

    • Dark Chocolate Chips or Chunks: 2 cups

      The Topping

      • Cinnamon Sugar: 1 tbsp sugar mixed with 3/4 tsp cinnamon

        Instructions

        1. Prep: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

        2. Cream: Beat softened butter and both sugars until light and fluffy. Add eggs one at a time, then stir in the vanilla.

        3. Whisk Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, baking soda, salt, cinnamon, cayenne, and espresso powder. Ensure the spices are evenly distributed to avoid "hot spots."

        4. Combine: Gradually add the dry mixture to the wet ingredients. Mix until just combined, then fold in the chocolate chips.

        5. Scoop & Top: Roll dough into 2-tablespoon-sized balls. Sprinkle a pinch of cinnamon sugar over them.

        6. Bake: Place 2 inches apart on sheets. Bake for 10–12 minutes. The edges should be set, but the centers should still look slightly soft.
