This week we were joined by a new friend of Sakamichi - Beard Matt! Together we drank some Hazy Little Thing, a stone cold classic of a hazy IPA from Sierra Nevada. We also quizzed Matt a bit on his history working in the beer industry in the US and what his impressions of beer in Japan have been so far.

This week we were delighted to be joined by returning guest Mac, from Kanpai Planet. Last summer he took a trip to Sado Island to attend a sake making school, so in this episode we talked about some of the differences and similarities between brewing beer and brewing nihonshu. This week is also our second anniversary at Sakamichi Brewing, and we have made a special beer to commemorate it. Together we drank and talked about our Second Anniversary IPA, then went down a real rabbit hole about professional baseball and Japanese population density.

This week we drank some Vic Secret from Stoup Brewing in Seattle - an excellent example of a North West IPA and an illustration of the effect of using different hops at different stages of the brewing process. We also discovered a brand new tactic for dealing with awkward social situations and discussed the uniquely Japanese concept of honne / tatemae.

This week we drank some Marina - a Belgian IPA from Kyoto Brewing which blends Belgian yeast with modern hops. Choosing the right yeast is one of the key decisions in designing any beer, so we also discussed a few of the criteria that go in to that choice.

Chris Macomber from Futako Beer Seta Brewery (check out their Instagram here) to try some Jubilation Winter Ale from Baird Brewing. It's an extremely flavourful beer that's best enjoyed with friends, family, and fictional characters. We also discussed our upcoming collaboration brew and pitched some beer name ideas.
