After leaving war-torn Lebanon, Rami Ykmour and his family relocated to Australia and set up in western Sydney.  

With an eye for opportunity, Rami and co-founder, now wife, set up their first Rashays in Liverpool, Sydney's southwest. 

They have since built 50 restaurants across east coast of Australia. 

Mark and Rami discuss how the Rashays franchise model operates, relying on data and what happened when Rami began speaking out about the COVID lockdowns.
