Tommy looks after about 150 staff to deliver services across restaurants and bars including Ostani, Louis and Leyla. He also looks after events at Realm and Burbury Hotels which are all part of the Doma suite of ever-expanding offerings.

Tommy has a specific view of the service industry that has been adapted for the current time and follows five principles to ensure he is always improving - principles that are adaptable across other professions.
