Decoction is a age-old technique for achieving better extraction and hitting the mashing rest temperatures with less modified malts, but how much difference does it make in the beer flavor. Fans of decoction swear that it adds that little something extra you just can’t get from infusion mashing. Malcolm discusses the results of two groups of triangle test panelists who could not significantly and statistically tell the difference between the two beers.
