    Welcome to Fabulously Delicious, The French Food Podcast, where we explore the wonderful world of French cuisine, culture, and everything delicious. Today’s episode is a special one—it's both a revisit and a tribute.

    This past week, the food and drink world lost an incredible voice, and I lost a friend and inspiration. Forest Collins, the brilliant mind behind the 52 Martinis blog and Paris Cocktail Talk podcast, sadly passed away. Forest was so much more than just a cocktail enthusiast. She was a passionate champion of Paris’s vibrant drinks scene—not just the drinks themselves but the people, the stories, and the places that made it all come alive.

    I first met Forest in Paris years ago, long before I started this podcast. Her warmth, knowledge, and sheer love for what she did were unforgettable. She was a member of the World’s 50 Best Bars Academy and served as President of the France chapter of Les Dames d’Escoffier, an organization devoted to women in the culinary and beverage industries.

    When I started Fabulously Delicious, Forest was one of the first people I reached out to as a guest. She was thrilled to join me to talk about Absinthe, a drink with as much intrigue and mystique as Forest herself. She didn’t just share her expertise—she also generously connected me with other wonderful guests like Tanisha and Preston Mohr, further enriching this podcast.

    So, in memory of Forest and to celebrate her remarkable spirit, I wanted to revisit this fabulous episode. Together, we’ll not only learn about the fascinating world of Absinthe but also get to know the extraordinary person Forest was.

    Dacquoise: Layers of History, Flavor, and French Elegance

    Today you should get ready to indulge in one of France’s most elegant desserts, the Dacquoise. In this episode of Fabulously Delicious The French Food Podcast, we uncover the rich history and culinary artistry behind this layered cake of almond and hazelnut meringue, whipped cream, and a buttery biscuit base. From its origins in the town of Dax in Southwest France to its evolution as a celebrated treat in French patisserie, the Dacquoise is a masterpiece that combines texture and flavor in every bite.

Known as a true visionary, Nignon’s dedication to French cuisine and his adventurous approach to flavors marked him as one of the unsung culinary masters of his time. From humble beginnings as a young kitchen apprentice, Nignon rose to prominence in Paris’s elite restaurants before embarking on an illustrious international career that took him across Europe and beyond.

    Baba au Rhum: A Boozy French Delight with Royal Roots

    In this episode of Fabulously Delicious, The French Food Podcast, we’re exploring the delightful and decadent world of the Baba au Rhum. This classic French dessert, a soft, syrup-soaked cake, has become a favorite across France—and beyond! But there’s much more to this boozy treat than meets the eye. With its roots in Central and Eastern Europe, and a name that means 'grandmother' in Slavic languages, Baba au Rhum has an unexpectedly international past.

    We’ll trace the Baba’s journey to France, thanks to an exiled Polish king with a sweet tooth and a clever pastry chef who transformed a dry cake into a dessert legend. This little cake was reimagined with a touch of French elegance, a dose of rum, and plenty of whipped cream, eventually finding a home in Paris at the famous Stohrer Pâtisserie, where it still delights dessert lovers today.

    Baba au Rhum has even found fame in Italy, especially in Naples, where it has become a local specialty. Italian pastry chefs took this dessert and added their own spin, creating the ‘babà’ and later inspiring the ring-shaped Savarin cake in France. Both cakes highlight the versatility of the Baba’s basic recipe, showing how one small cake can inspire so many delicious interpretations.
