Matjaž Deželak is a biologist whose PhD involved research both at the Faculty of Medicine in Ljubljana (Molecular Biology and Biochemistry) and the Slovenian Institute for Hop Research and Brewing (Biotechnology). He finds it equally easy to discuss glucagon-like peptide-1 receptor antagonists and gluten-free beer-like beverages, hoping to bring the joys of beer drinking to those suffering from coeliac disease.
