OS 1180: Saturday Story Time – Old and New Edition

We had expected to see an empty chair this week, as Capt. Kevin was supposed to be up in Indiana for his annual golf getaway.  Unfortunately for him (but good for us), travel complications put the kibosh on the trip so he was back in the studio with Capt. Kirk and Jeff.  Kevin brought up the fact that it was the 3rd anniversary of the Greatest OS Story Ever Told – we kick things off with a partial re-telling…and we all laughed just as much as we have the past two years!

But old stories weren’t the only stories being told on this episode.  Kevin talked about two big catches: a mule snapper with his buddy Travis and an amazing sailfish one of his charters caught this week.  Kirk talked about a great charter he had with Birthday Boy Kevin, and all the guys told some mangrove snapper stories (passed along some tips, too).

Captain Kirk’s Baked Brie Appetizer

Ingredients:
Stephanie’s Pita Chips(Sea Salt)
Wheel Sago Blue Brie or Plain
Jar of your Favorite Preserves
Pillsbury Croissant Rolls
Egg 1
Butter
Cookie Sheet Pan

Preparation:
Open the Croissant rolls package and roll out. Grease the sheet pan with a small amount of softened butter to prevent pastry from sticking during the cooking process. Roll the dough out with one of the rolls onto the pan. Open the brie cheese and place on pastry . Carefully ease the dough around the brie on the sides leaving the top open. Put your favorite preserves… (I like Raspberry or Blackberry) in a decent amount with a few tablespoons spread on top of the cheese. Carefully layer the top with a layer of the dough (on top over the preserves) Beat the egg in a bowl and with a pastry brush lightly coat the outside of the dough with an egg wash.

With the oven set at 300 degrees bake for approx 12 minutes careful not to burn the dough. Add more time if necessary or less according to how hot your oven cooks. When its done remove and lightly coat with melted butter using a pastry brush.

Serve with the pita chips. Great for snacks, watching a Jags game or entertaining for a party or special occasions!
