They lived a dangerous masquerade -- and drank with a passion no mask could hide.

1oz vodka
3/4oz lemon juice
3/4oz elderflower liqueur
3oz sparkling water
1/2oz pineapple juice
2oz Viniq

Combine vodka, lemon juice, and elderflower liqueur in a shaker with ice, and shake vigourously for 30 seconds. Strain into an old-fashioned glass, and add sparkling water and pineapple juice, stirring to combine. Pour in Viniq and give one final stir.

It’s a refreshing drink that you can throw together and say “Oh this? it’s just some things I had lying around”.

1oz spiced rum
1/2oz peach schnapps
1 1/2oz pineapple juice
1/2oz simple syrup
3/4oz lime juice
10 mint leaves
4 drops blue curaçao

Combine ingredients except blue curaçao in a blender with 6 ice cubes, and blend until smooth. Pour into cocktail glass and add drops of blue curaçao on top.

Alternatively, this drink can be served as an up drink, shaken, if you omit the mint.

2oz gin (use Ink Peaberry Gin for extra colour)
1/4oz Luxardo juice
1/2oz elderflower liqueur
1/2oz lemon juice
cherry and twist of lemon, for garnish

Combine ingredients in a shaker with ice, and shake vigourously. Strain into a cocktail glass and garnish with lemon twist and cherry.

-For the classic Aviation, reduce the gin by 1/2 ounce and replace the elderflower with 3/4oz Creme de Violette or Creme Yvette.

1-1.5 tbsp applesauce*
3oz Prosecco

Pour bourbon, Snap, and applesauce into a champagne flute. Top up with prosecco.

*You can use premade applesauce, or can make your own by blending 3 cored apples, and a tablespoon each of water, lemon juice and sugar. Feel free to add more if you like a sweeter drink.
