For Dinner, I like to eat "lower" carb so I can manage my blood sugars properly throughout the night. Follow this blood-sugar friendly recipe to help make you feel better throughout the night. This recipe is not only for diabetics, but also for anyone who wants to sleep well through the night.

RECIPIE FOR 2:
- 1 pound of meat (lean beef or chicken)
- 1 cup of spinach
- 1/4 cup of brown rice
- 1/2 cup of black beans
- 1/4 of an onion
- 1/2 bell pepper (any color)
- 5-7 mini tomatoes
- 1/4 cup cheddar cheese
- 1 scoop of garlic hummus
STEPS:
1. Put the meat in a pan and cook on Medium heat
2. While the meat is cooking, chop your veggies (onion, pepper, tomatoes)
3. Put the Spinach and Brown Rice in a bowl
4. Top with black beans, chopped onions, chopped bell pepper, tomatoes)
5. Add 1/2 lb of cooked meat to the bowl
6. Sprinkle on the Cheddar Cheese
7. Top with 1 scoop of Hummus
8. Your Bowl is Ready to be Eaten!
TOTAL TIME = 15 MINUTES
