Max and Grace hosted me in Dalton's Grain Mill in Kilkenny, where Waterford Whisky's Mark Rainier stores his single farm origin barley in The Cathedral, the specially customised grain warehouse. He gave me a personal tour of his maturation warehouse, boutique distillery, fermentation yard, malting house and his office... but don't worry, they're all within 10ft of each other.
