    India pale ale is the style that built craft beer.  With bold, hoppy flavors, it was distinctive and different and tantalized tastebuds of craft beer drinkers. 

    IPA is a historic style, but historic doesn’t mean static.  Yes, there are many modern interpretations of IPA, but even historic IPA evolved over time, in response to tastes, wars, taxation and many other factors that drive beer makers and beer drinkers.

    Ron Pattinson is a British beer writer and historian who lives in Amsterdam. He has wasted the last two decades of his twilight years researching and obsessing over many beer-related topics.On his Shut up About Barclay Perkins blog, he writes in excruciating detail about beer history, mostly of British beer styles, with excursions across the Channel into German Austrian, Dutch and Scandinavian beer history. The books he has authored on beer history are almost innumerable. They are mostly significant for their single-word titles, such as "Porter!", "Mild!" and "Bitter!" and their enormous page count. His published works include a book on brewing historic beers called "The Home Brewer's Guide to Vintage Beer" and the definitive work on Scottish beer and brewing, the snappily-titled "Scotland! vol. 2". The few copies of his books to be sold mostly reside in brewers' offices. He is married and the father of two sons in their twenties, neither of whom have yet bothered to move out, despite numerous hints.

  • AAB 026: Breweries, Trademarks, and the Law

    A brewery’s trademark and its subsequent labels are its identity and protecting that involves many steps that involve beverage lawyers, government agencies, keeping tabs on other breweries and so much more. Today we speak to three guests with an eye on trademark protection, homage/parody vs. intellectual property theft and the legal ramifications of what happens when the judicial system has to get involved. This is a fascinating part of the beer world.

    Brian is a 2012 Graduate of the American Brewers Guild Brewing School, where he took their Intensive Brewing Science & Engineering course for Breweries in Planning. Prior to that he graduated from Boston College with a double major in Marketing & Finance.  He has worked in marketing for the New England Patriots/Revolution and the Lakewood BlueClaws, as well as finance for Major League Baseball and Royal Caribbean Cruise Lines. He has also managed operations for a family business. Brian founded Departed Soles Brewing Company in 2014, which in 2015 opened its doors to become the first brewery in Jersey City, New Jersey since prohibition, and the first brewery on the east coast to craft gluten free beer in dedicated equipment, along with traditional glutenous beers. The brewery has won medals at GABF, the World Beer Cup, and Best of Craft Beer Awards, among others. The brewery is now run by Brian's dog, Bogan.


    Bill Covaleski of Victory Brewing Co.
    Bill has played a pivotal, creative role in leading the overall growth strategy of Victory Brewing Company. He serves as creative muse and guide for Victory beer brands and culinary collaborations as well as a driving force behind community engagement. Covaleski and Victory co- founder, Ron Barchet, serve as brewmasters, providing strategic guidance in the development of new beer brands.

    In February of 2016 Covaleski and Barchet joined Phin and Sara DeMink, founders of Lakewood, NY based Southern Tier Brewing Company, as Artisanal Brewing Ventures, a partnership platform for like-minded brewers to continue to innovate and grow.     Brendan focuses on intellectual property matters, commercial litigation, and has significant experience efficiently and promptly reviewing corporate contracts. He has represented both plaintiffs and defendants in patent, trademark, copyright, and trade dress infringement actions. He also prosecutes trademark and copyright applications in the United States and globally for a wide range of clients and industries. A major focus of Brendan’s practice is representing and counseling breweries, wineries, and distilleries with regard to everything from corporate formation and licensing to M&A and distribution contracts. He is an award-winning homebrewer and one happy client even named a beer after him. Brendan has been quoted in various publications about legal issues facing the alcoholic beverage industry including the Wall Street Journal, Chicago Tribune, and San Francisco Chronicle.  He is a regular guest on industry podcasts such as BrewBound and Good Beer Hunting.

  • AAB 025: The Fun and Science of Fruit Beers

    In the early days of craft beer, fruit was added to beer to offer something to people who didn’t like beer.  These beers were typically made with syrups added to a beer and not a lot of thought went into them.  Today, breweries are embracing fruit and building beers around them.  The fruit is the focal point of the flavor and with increased scientific knowledge of how to work with fruit, brewers are pushing and pulling levers - microbes used to ferment the beer, when they add the fruit and how much and for how long - to bring forward all the right flavor chemicals.  Modern fruit beer is bursting with flavor.

    Bret Kollmann Baker is a founder and the COO of Urban Artifact in Cincinnati, Ohio. Urban Artifact is the countries largest fruit beer only brewery, using over 1,000,000 pounds of fruit per year. With degrees in chemical engineering and brewing science, Bret has been able to help build out a brewery dedicated to handling massive amounts of fruit puree. In addition, Bret is the Beer Ambassador for Les Vergers Boiron, helping them reach more professional breweries with their fruit purees.     5 years ago, Steven Smith-Hay started Vault City Brewing after experimenting with heavily fruited, mixed fermentation sour beers and spotting a niche with huge potential in an otherwise crowded market.   • AAB 024: Spontaneous Fermentation in Beer

    Spontaneous fermentation may be the most unique brewing technique in the world and the beers they produce are just as interesting, with many flavors not seen outside these styles. But “spontaneous” doesn't really tell you anything about what goes into making lambic, gueuze and American made versions from insane boiling hours to months and years waiting to see if the beer is actually any good to sell. Today we talk to two producers: one a classic lambic house from the Senne River Valley and the brewery that defined American sour brewing.

    Werner Van Obberghen is one of the owners of Brouwerij 3 Fonteinen.

    In 2013, Armand Debelder and Michaël Blancquaert called upon Werner to help shaping the future
    of 3 Fonteinen. With his experience in strategy and with masters in finance and business economics,
    he is now responsible with Michaël for managing 3 Fonteinen and its team of twenty. Michaël takes
    care of the creative & operational side (brewing, blending, bottling, labelling) while Werner manages
    the business side (administration, sales, marketing, tasting room).

    Michaël and Werner continue the life-long craftmanship of Armand and – inspired by his values and
    wishes – took 3 Fonteinen a step further. Longer barrel ageing, a local cereal and hop collective with
    farmers, a network of families with Schaarbeekse sour cherries, a direct relation with some of the
    most progressive biodynamic wine makers are just a few examples.


    Jeffrey Stuffings grew up on the gulf coast of Florida. He studied government at Notre Dame and law at Boston College. While in law school, he discovered homebrewing and craft beer. He and his wife Amber moved to Texas 2007. Shortly thereafter, Jeff began working on starting Jester King with Amber (co-founder) and brother Michael Steffing (co-founder). 

    Today, Jeffrey focuses on beer making and Jester King’s operations. He and Amber live in the Dripping Springs, Texas area and have two children Laura and George.
